We usually have a Tuesday Taco night. This week it is going to be Chicken Tacos. Then the left over chicken will be used for Friday...Chicken Tortilla Soup.

I am not much for online recipe sites but I do like www.foodily.com. It is all from scratch. The two cookbooks that are a must have that have really changed my kitchen and pantry are Dine on a Dime (check out amazon.com) and Wildly Affordable Organic, the second one started out as a foodstamp challenge in North Carolina. She wanted to prove that you could eat healthy on food stamps and she did!! She has current price lists in the book, organic and non-organic shopping lists and easy to follow recipes and menus. I dont follow the menus, I have my own menus that I like. I do go meatless when my husband isnt here (about 3 night a week). I make a list from the store flyers and stick to my list when I am at the store (unless I see a sale that is to good to pass up) You just have to be flexible but frugal. It takes practice!! Dont get discouraged. Just this week I burnt the crap out of a batch of pinto beans to make refried in the preasure cooker, I have been doing this for about 5 years now. Just have a cookie and move on to the next thing, my split pea soup came out great though.. Check them out, have fun and get the family involved!!

I just bought my daughter Halloween cookie cutters and made sandwiches with 'em!! Celebrates the season....and she loved it! I also carved "You can do it!!" on her turkey sandwich for lunch at her preschool. She said, "Mama, I loved it so much, I didn't want to eat it." Ut oh........ :P

I love allrecipes! I get tired of making chicken or ground beef the same way, and they have tons of great recipes.
