You don't mention how old he is, and that could make a difference. But the fact is that kids will eat when they are hungry and it is up to you to make a difference in his eating habits. Give him new things and don't let him have his "favorites" until he eats a certain amount of the new thing (I usually go with 3 - 4 bites, my daughter is 5). If he just refuses to eat anything, then he misses that meal.
If you are talking about a baby who is just starting on real food, remember that they have to be exposed to a new taste/texture 10 - 20 times before it stops being foreign to them. So when they spit out a new food, it isn't necessarily that they don't like it, it is just unfamiliar.
