OK so im pretty sure im only writing this because im so hungry but cant be bothered making myself something lol
So seeing on how we are all from different places around the world i was wondering what everyone's favorite meal was. Is it something that is linked to your country?
Is it something your mum made when you were a kid?
Can you cook?
Do you follow a recipe or make it up as you go along?

For me i love a roast with all the trimmings and go to sooooo much effort to do the weekly Sunday roast with family and friends. (Something that i experienced at friends houses when i was younger and always said i would do when i grew up lol)
Also being an Aussie we are almost programed to love a bbq!
I love choc ripple cake, it reminds me of being a kid (the one thing my mum couldn't mess up trying to cook lol) I now make it with Noah and he loves it too...
Im pretty sure im an ok cook because we always have my partners friends popping over for tea, about 3 or 4 nights a week! lol

I eat my steak still mooing, thank you very much. :) Sear it well on the outside, and leave it nice and rare and red and tender on the inside. Yum yum!

Honestly though, I can eat steak anywhere from rare to medium-well -- as long as it's tender. I know some people who will only eat their steak well-done, to which I say, "You obviously just don't like steak."

And no, Kati's comment didn't gross me out. I've got a pretty strong stomach.

And when I was pregnant, I wanted bread. I had gestational diabetes, and so could not eat anything but that pathetic, spindly little Weight Watchers bread. So on the way home from the hospital, I made Keith stop at a bakery to pick up a big honking loaf of freshly baked white bread and some butter.

It was heaven.

How I make whipped cream: Buy whipping cream. Put in large bowl. Whip with hand mixer until fluffy (about 20 minutes). Add sugar (I add 4-6 tbsp) until it tastes right. LaCi, I'll have to try it with vanilla. =)

whipped cream recipe? I don't have one lol. I just kind of wing it. Whip cream til fluffy, add powdered sugar til it's your preferred sweetness. Add vanilla to your liking, and then add extra vanilla because the secret to all good sweets is more vanilla than you think is necessary ;D although not so much that it deflates the cream

Wow I'm amazed! You put it on like you would salt. But I would put a little then taste and put more, because it could be hot if you aren't used to it. You can also put it on ANYTHING you would put salt and pepper on. I use it in almost every meal. I hope you like it!

Let me know how the jambalaya comes out!

LOL!! You ladies crack me up!

Okay Kati, the recipes. Honestly the best jambalaya is my husband's grandmother's unwritten recipe, so I've never gotten right. Here is an easy one:

1 lb sausage (sliced)
1 lb chicken (chopped)
1 onion (chopped)
1 bell pepper (chopped)
(you could add shallots or celery if you like)
2.5 cups rice uncooked
garlic powder (or chopped garlic cloves if you prefer)
Cajun or creole seasoning
olive oil

In large pot heat olive oil. Saute two or three slices of sausage until juices run out. Take sausage out then saute onion and bell pepper in olive oil and sausage juice until tender (just takes 3 minutes or so, also add chopped garlic if you prefer that to garlic powder). Add sausage, chicken and seasoning and saute until fully cooked. Add rice and saute uncooked rice for a few minutes (to pick up on all flavors in the pot, don't let burn!) Add 5 cups of water and bring to a boil. Then turn on low and cover and simmer until there is no more water (but don't let jambalaya burned or too dry!) That should take about 30 minutes.

Mexican Cornbread:

1 cup cornmeal
2 beaten eggs
1/2 teaspoon of soda
1/2 teaspoon of salt (leave out soda and salt if you have self rising cornmeal)
1 can sweetened condensed milk
1 can creamed corn
1 can whole kernel corn (drained)
1 onion chopped
1/2 bell pepper chopped
1 lb grated cheddar cheese
1/4 cup olive oil

Combine all ingredients. Put in 9 x 13 pan. Bake at 350 for 40-45 minutes.

I also have a great recipe for shrimp and corn chowder if you are interested. Soooo fattening but great for a cold night!

Medium rare steak, a really really good sandwhich where I don't have to heat up the damn lunchmeat, a greek pizza (dammit with not being able to have soft cheeses!), Tiramisu (with alcohol!), I can't decide on an alcoholic beverage but I'm SO gonna have at least one! lol!

@Christina, the only way I like Chorizo is when I make breakfast burritos. I don't know how your hubby likes it though. I usually mix mine up with eggs. My Nana makes hers separately. She cooks up the chorizo and then you can eat it that way or you can put it with the egg yourself. I cook the chorizo then add the egg and scramble it all together. You have to cook the chorizo first though, otherwise you'll wind up burning the chorizo or the egg.

For example, if you go to the butcher you can get Pork Chorizo, I'm not sure if they sell Beef Chorizo at the butcher, I've never seen it there and I don't even know if butchers in some areas even sell chorizo, i've never looked anywhere but Arizona, Cali, and Texas for it. Anyway, you get pork chorizo or beef and you can cook it up the same way but if you get it from the butcher it's likely to have a little less fat than if you buy it at walmart in the tube. The brand is El Mexicano (they have a website, my mom thinks). Either way it's still yummy!

So if you buy the tube and you cook half of that, you're going to want to add at least 6 eggs - depending on how spicy or how many eggs you want, the more you add the less spicy it will be.
First, you fry up the chorizo, wait until it falls apart. When you put it in the pan it'll be all sticky and stay together, once you start cooking it (medium heat), it'll fall apart. (It'll be like hamburger crumbling.) It'll stay the same color, that's when you add the eggs. You have to whip them up first, then throw them in the pan and stir it all together and it'll be like a scramble. You can then put them in a tortilla and add cheese or whatever you like (or he likes).

Some people like to add potatoes to their burritos as well. Just fry them up first, then throw the chorizo in with the potatoes, fry that up, then add the eggs. Depending on how greasy the chorizo is, you may need to add a little oil so the eggs don't stick. If it starts to stick, add a little oil. (That way the potatoes don't get too mushy.) Add 4 potatoes to one whole tube and about 6 eggs with that. Then add to taste.

The El Mexicano website probably has recipes for Chorizo other than that, but that's the one that I know, use, and love. lol. You can also put chorizo in beans (refried beans) and it is really good. But those are the only ways that I like it. =)

You can also google chorizo recipes and see what they have. My Nana sometimes serves it as a sausage side dish too. (I don't like it that way, but some people do.) I hope that helps!

I'll go get my jambalaya recipe and I actually have a good one for Mexican corn bread too!

But unless you can find Tony Chachere's Creole Seasoning it won't be true Louisiana style. I think they've gone out in other states, but from what I understand it's hard to find. You can order online though. You won't be sorry! Slap Ya Mama is another good Cajun seasoning but it's HOT if you aren't accustomed to Cajun cooking.

i am interested in some of sara's recipies as well!! i'd love to make jambalaya some day with a true louisiana recipie! never made it at all, but still would love to try it. crawfish scare me the way you guys eat them. i prefer not to suck juices out of anythings head!! i'd eat their leg meat like crab, but other parts of it, no way.
i always have had my cornbread sweet. we either put butter and maple syrup on it, or put butter, sweetened strawberries, and then put milk on it. i would love to try some mexican cornbread. never had savory.

There are so many foods I haven't even heard of... LOL. I think someone mentioned blue steak, what is that?
I LOVE steak, give me a good medium rare steak (pink in the middle but not too bloody) with a baked potato and some corn, and I'm in heaven. I guess I'm easy to please. lol.

I can't cook steak worth a damn though. ha! I love anything bbq, but hubby has to do it, that's not my specialty.

My specialty is Mexican food. My Nana (originally from Mexico) is the best cook I know! She wakes up every morning at 5a.m. (on the dot) and starts breakfast. And it's a buffet, seriously. She makes hashbrowns, eggs, chorizo, pancakes, tortillas (she usually does those from scratch at least once every three months but she's elderly now so she buys them at times from others who do them from scratch), and if you want something special tell her and she'll make that too. Oh and she makes the BEST mexican cornbread EVER!

Lunch is usually left overs (if there are any) from the night before. She used to do a buffet for lunch too, but since Tata (granddad) passed away she kinda does left overs or sandwhiches cause not many are at her house.

Dinner is usually a buffet, depending on who is there. Otherwise it's a small thing for those that live there now. (My aunt moved in to help her out.) She makes any number of things.

I love to make flat enchiladas, that's what I've always called them, I don't recall the real name. lol. You basically take masa, cheese, baking powder, and milk and mix it all together. Then you roll little golf ball sized patties up in your hand and put them into a damp towel and mash it so it's like a little saucer looking thing. Fry it in oil or lard (yes it's fattening!). After they're cooked thoroughly you can top with hot enchilada sauce or green chili sauce and your favorite toppings. They are SO good!
Hmm, Chicken Taquitos with green chile's, Homemade tacos.... Now my mouth is watering. I haven't been cooking since I've been pregnant and not able to stand for long periods cause of my hips. Ugh! I can't wait until my mom gets here... she makes all this stuff too. Yay!

And I love baking... my favorite is the gourmet brownies I made for my husband last valentine's day. (Partially from a box, they have 4 kinds of chocolate chunk inside... soooo yummy and melty!)

Now I'm starving and I miss Arizona because Kentucky does NOT have anything remotely close to the Hispanic food selection they have. :( I'm so glad my mom is bringing me real tortillas and freezing some green chile's to ship to me. LOL!

can't stand lamb, anything curry, or anything loaded with onions. a little cooked onion i can handle, but most people put in too much for my tastes.

My second oldest sister's fiesta chicken casserole thingy.. Not sure exactly what she called it, but it was delicious! My brother's spaghetti.. If we're eating Italian, it's pasta.. If we're eating Mexican, it's usually enchiladas or quesadillas.. If it's Americanized-Australian, it would be the Alice Spring's Chicken (Outback.. Although my friend's ex was visiting and he's from AU and he said the actual food wasn't bad, but the service would have been better in Australia..) Chinese, General Tso's Chicken or Sesame Chicken.. And you can't forget the egg rolls.. Oh, and yes.. Burgers.. Oh how I love burgers..

My favorite meal would be a turkey dinner with salt beef and all the fixin's. I also love chilli, scallops and cod cheeks/tongues (it's been so long since I had a mess of those). And for dessert either a cherry cheesecake or sex in a pan.

Well ladies I hate to tell you but we have the BEST food in Louisiana. You just don't know what you're missing! Boiled crawfish, jambalaya and white beans, fried catfish, crawfish ettouffe, po-boys, redbeans and rice over cornbread, muffalotas, beignets...Cajun cooking is the AMAZING! And I've been to Cajun restaurants in other states, NOT the same! You have to come here to fully appreciate and understand our cuisine.

Oh yeah, I can cook some of the above.
