I don't cook, or bake so I do easy peasy fun recipes: I chop up those thin mints with my chopper (Pchef tool) and put them in the blender with softened ice cream. A large dollup of whipped cream on top. Easy, fabulous, slightly sinful.
Low carb 'Thin Mints' for my diabetic husband!

I love to make Lemonade cookie ice cream sandwiches. All you have to do is scoop homemade vanilla ice cream between two Lemonade Girl Scout cookies and eat. DELICIOSO!
I saw a bunch of variations of muddy buddies last year around Girl Scout Cookie time and came up with a Thin Mint Muddy Buddy recipe (or some of you know it as puppy chow). It was the best recipe of muddy buddies ever and it is nut-free!
