By far my favorite late Spring early Summer dessert is with Rhubarb. I grow it in my garden and it comes up yearly so I have plenty for myself and others to enjoy!

Here is my newest recipe for a Rhubard - Berry Sauce

4 cups diced Rhubarb
1 cup fresh or frozen mixed berries
1 cup organic raw sugar
juice of 1 lemon
1/2 teaspoon of lemon verbena

In a saucepan combine all the ingredients and bring to a boil. Once you let it boil for 30 seconds reduce the heat to medium low and let cook until Rhubarb is soft about 20-30 minutes. Take off the heat and let cook for about 10 minutes. With a immersion blender, blend the mixture until smooth.

Serve on ice cream, pound cake with fresh berries or even flavor morning oatmeal. This is also perfect for a gift by placing it in jelly jars. You can see other Rhubarb recipes by going here..

Did you know that you can freeze watermelon? Just chop it up and place in on a cookie sheet in the freezer. Once frozen solid you can store them in freezer baggies. Now you have that fabulously tasting watermelon ready for any recipe. My favorite... strawberry, watermelon smoothies!! This is perfect for a summer day!

Plus, since watermelon is in season it is very frugal! If you freeze it, you can have this delicious smoothie even in the winter!

I'm a huge fan of 'the crisp'. The base of the crisp depends on the season. Whatever fruit is local and fresh is bound to be featured and it's a relatively healthy option {compared with pies or cookies}. A mixed summer fruit crisp is constantly featured on my table throughout the summer.

My recipe calls for apples {as I originally shared it in autumn} but it really is incredibly versatile. Incorporate your local flavors, mix in your favorite liquors {or leave it out} and enjoy the praise you receive as you serve up a winning dessert. No one has to know how easy it was except you and me!

I totally agree! We just made fruit pops from fresh oranges - Day 1. the kids squeezed the oranges, I poured them into a popsicle mold. Day 2. the kids enjoyed a yummy, healthy popsicle. It's an activity + a snack in one.

When entertaining in summer, I love to make a pineapple platter. It makes a great centrepiece and is a refreshing treat to nibble away on. Carefully sliced the spiky top of the pineapple, and place in the middle of the platter. Slice the pineapple into 8 wedges (from top to bottom). Cut off the core, and then slice off the pineapple in a long strip. Cut into pieces. Place a piece of cheese and a half a glace cherry on top (yes, it sounds very 70s but tastes delicious!). Place the pineapple back on the skin and arrange on the platter. Spectacular!

I love all the fresh fruit in the grocery stores this time of year! Nothing beats homemade desserts with fresh sweet fruit in the summer! I have 3 recipes that are perfect for summer:

INDIVIDUAL STRAWBERRY COBBLERS:
Made in individual ramekins so they don't take long to bake and everyone gets their own! I also cut back on the sugar compared to most recipes but you will never know the difference!


BERRIES & CREAM PATRIOTIC CUPCAKES:
These red, white, and blue cupcakes are perfect for 4th of July or any summer event! They are piled high with a cream cheese frosting and strawberries and/or blueberries, dipped in white chocolate or candy melts, then decorated with red, white, and blue!


MINI STRAWBERRY SHORTCAKE POPPERS:
These individual bite-size versions of strawberry shortcakes are always a hit! No utensils needed because you can just pick them up and pop them in your mouth! There's also a secret ingredient that will make these cuties "pop" in your mouth!
