My girls first created their own paper dolls. I later added paper men and dolls from all historical eras. They love coloring them and playing with them.
www.papertoys.com have some wonderful free 3D paper models. These are fabulous for "busy hands" while I read aloud. I just look for something relevant to the theme we are reading. Later we photograph the model, then squish it flat and paste it in our notebooks.
Spoonful has a Build a Barnyard Scene Paper Craft. This can be a fun toy for 3-5 year olds, or it can be used to make an inexpensive DIY Montessori grammar farm (http://livingmontessorinow.com/2011/05/16/activity-of-the-week-the-montessori-grammar-farm/)!
