Mac & Cheese!
Since people are usually hosting BBQs for the 4th, I rely on my mac & cheese recipe to lead the side dish lineup. It also doubles as a kid-friendly main dish and always goes fast since everyone takes heaping spoonfuls.

The other week I made a delicious strawberry & rhubarb pie. Thats provably not quite fitting the 4th of July theme, but I did use a tiny star cookie cutter to cut out star shapes from the pastry revealing the sweet as pie pink filling below. It looked awesome and as long as your filling was presentable could be adapted to most pies - blueberry star pie perhaps?
Plus the star cut outs can be used for further starry decorations on your other dishes...
I have a super easy healthy recipe perfect for 4th of July...fresh herb cream cheese spread on slices of cucumber. One of the best things about this is that you can add whatever herbs you like or what's growing in your garden, chop them up, and mix with cream cheese. I chose to spread them on cucumber slices but you can put it on crackers, crostini, peppers, carrots, whatever you like! Really easy and really good.
These were called All Season Peach Squares, but I like them in the summer when you can get fresh peaches. Everyone I have made them for can't stop at just one!

My family goes crazy for the Tomato Basil Cucumber Salad I make during the summer months. It's ridiculously simple, very light and fresh so it's a great addition to any menu. It is our favorite side for a summer BBQ or a celebration. On nights when I'm too tired to make much or we've run out of time I often serve this salad with a fresh loaf of bread and a fruit salad for dessert. It's constantly on the table at our house!

Have you ever done foil pouch cooking? It's so easy. All you do is wrap up a chicken breast or piece of fish along with some vegetables and seasonings in foil and grill until done. Then slice open the packet and serve. If you're camping, it can be done over an open fire and you can eat right out of the poil packet. Clean up is easy, too!

My go-to party recipe is lentils and rice. This classic recipe has very few ingredients and is so simple to prepare, yet it turns out to be delicious. People often request that I bring it to parties. This recipe makes a large amount and it is suitable for vegetarians, vegans, people with gluten sensitivities and just about everybody else! My kids love it too, and they are super picky!
This is a fun and festive way to eat coleslaw. It's pretty and colorful and it isn't laden down with heavy mayonnaise like most coleslaws. It's a great way for everyone to eat their veggies!
This gluten free pasta salad is great for bbq's! It doesn't have any of those creamy ingredients that can make you sick at picnics. It can be made a day or two ahead of your party and did I mention it is YUMMY?!?!
Veggie foil packets are wonderful. You can put pretty much any fresh veggie in a foil packet with a little butter or oil and some seasonings. Throw it on the grill and soon you have a lovely serving of veggies. You can also experiment with different sauces -- soy sauce, orange sauce, barbecue sauce or squeeze some lemon or lime juice on top. Add some sesame seeds or toasted almonds for a little texture if you wish. Some of my favorite veggies to use this way are broccoli, squash, zucchini, peppers, mushrooms and tomatoes.
