Fresh Sweet Corn and Black Bean Salad - I freeze many bags of freesh sweet corn when it's at its peak of freshness and sweetness, and I use it year round to feed my addiction to this light healthy salad!

I made corn salsa and my kids loved it!

Chop 2 whole tomatoes
Add 1 cup of thawed frozen corn
Squeeze 3-4 limes in
Add about 1/4 cup of chopped, fresh cilantro (more or less to taste)
Add about 1/8 cup of chopped onion (more or less to taste)
Salt & pepper to taste
Mix together and add more lime if necessary

Put in fridge for a couple of hours to let all the flavors blend and serve with warm tortilla chips.

I recognize that this isn't a traditional corn recipe but it's one of our favorites!

My spicy peanut noodle recipe originally called for peas and carrots but one day I threw in some fresh corn instead of the peas as a variation. On that day in our house a new favorite dish was born. If corn is in season I just take it straight off the cob, if it's not I pull some frozen corn from the freezer. Either way this recipe is a hit and my boys love it!

Here is a super simple and delicious corn salad that I came up with a few years ago and is now a family favorite.
This is best with fresh corn on the cob but frozen can also be used.
Boil a pot of water, add corn, return to a boil and remove corn after just a few minutes 3-4.
Put hot corn into a large ice bath to stop the cooking and cool it down (this is a cold dish)
Cut the corn off of the cob into a bowl.
Add chopped onion (I prefer purple).
Add fresh chopped cilantro. There you have a simple great tasting fresh salad.
A squeeze of fresh lime juice is good too if you want. I usually put the lime near the bowl so people can add it if they wish. Enjoy.

Honestly.. corn on the cob is pretty amazing with nothing on it. But if you want to jazz it up a bit, toss on some parmesan cheese before serving. And because parmesan has a salty flavor, there's no need to add extra salt!

My girlfriend's mother shared her recipe for creamed corn with me. It has become a family favourite and I always make a double batch during the summer, and freeze it for winter. Super easy, but SO delicious.

Of course there's corn on the cob, but one way I love using corn is in soups. This recipe comes my friend, cookbook author, and monthly guest poster, Holly Clegg. I love soaking corn on the cob with the husks on and throwing them into the fire. This gives it a sweet and smokey flavor. It works wonderfully in a Southwest couscous salad: a light, and fluffy miniature pasta, mixed in with my favorite springtime flavors: ripe tomatoes, black beans, sweet roasted corn, and tossed in a lime - cumin infused vinaigrette and topped with creamy diced avocados. This tastes great alone or served as a dip with corn tortilla chips. It is such a versatile recipe; start off with you can add whatever ingredients you like!

With summer right around the corner, the smell of fresh corn will soon be in the air.... can you smell it? And what goes well with corn? Scallops! Such a beautiful joining of flavors. The sweetness from both the corn & scallops will bring a bright taste of summer to your table. I also added an adapted option of this recipe so my wonderful vegetarian husband could also enjoy the meal.
My entire family really loved this meal. And for those of you out there who don't think your kids will eat scallops or you have not tried them yourself.... give it a try! You will not be disappointed, my 2 & 4 year old asked for seconds :)

I love making corn chowder. I seem to collect recipes every time I see one, but I always use low fat milk or soy milk (Silk) instead of cream. It's good with a bit of chile pepper in there too. One of my favorite toppings is Trader Joe's corn relish, which you can get near the salsa. I use it on tacos, eggs, crackers, and mixed in with guacamole.
