I love to make vegetable fried rice - and the secret ingredient is cauliflower rice! Using your food processor, you can cut cauliflower super small, so it looks like grains of rice. My whole family loves it, it has tons of veggies, and I cook it all in one big skillet!
This hardy soup is easy, full of flavor and only takes one pot to make! Chop an onion, open cans and dump it all in your crockpot! I love how easy this is to make. Keep the canned ingredients on hand, a couple chicken breast in the freezer, and whip out this recipe when you can't figure out what to make for dinner. Have leftovers? No worries...this recipe freezes well!
Soup is my favorite thing to make and serve. My Lasagna Soup has all of the great flavor of lasagna with a fraction of the effort. If I am really motivated, I add a salad and some garlic bread.
My favorite standby soup recipe is Warm Spicy Carrot Soup. With two ingredients from the supermarket and some pantry staples you can have dinner on the table in 30 minutes or less. As the soup cooks the smell of warm spices makes everyone's mouth water and no one is late to the table once you announce that dinner is done! I often serve this with a fresh loaf of bread or fresh naan to round out the meal.
Soup is one of my favorite go to one pot meals. You can throw anything in a pot with some stock and cream and it turns into a comforting and delicious soup. One of my family's favorite soups is Baked Potato and Corn Chowder with Bacon. Creamy, slightly sweet and smoky, it's a perfect way to use up leftover baked potatoes this summer!!
4 chicken breasts
1 jar mild salsa
jasmine(or ther) rice, cooked
place chicken in crock- pot, pour jar of salsa over
cook on low all day
put on top of warm rice

One of my family's absolute favorite soups that I make is my Chicken Enchilada Soup. It can be as spicy as you like (or don't like), is hardy and very cost effective (1 recipe makes eight 1 Cup servings). It's also free of 6 (soy, fish, seafood/shellfish, peanuts, tree nuts and eggs) of the top 8 allergens, so that's always a plus. :) It never fails to warm us up from the inside of cold days.
I love upside down chicken pot pie. I have my own recipe for it to. Everyone that has tried it begs for more. I made a huge casserole dish and me my boyfriend and son demolished it! My secret is ... Knorr chicken pasta chicken and rice in a can drained, cream of chicken, cream of potatoes, mixed frozen vegies, and a can of buiscuits.
I love anything that cuts down on washing up, not to mention that something just seems EASIER to cook if it's in one pot!

My mom's chili is DE-licious! And what's more: I've adapted her recipe to also make it allergy-free without losing an ounce of flavor! Mmm....
A recent hit at our house has been Slow Cooker Mango and Black Bean Chicken. Even my twin toddlers will eat this super easy (not to mention healthy) dish right up!
Another one-dish go-to meal is Sloppy Joes. We love making them into sliders...
I regularly make ribs, pulled pork, chicken in the crock pot. I recently tried spaghetti - it turned out great and *ding ding ding* the best part - the kids loved it. Its real simple - spaghetti and all the ingredients in the pot, turn it on, go off to do whatever you do and come back to a delicious pot of spaghetti & sauce.

Garbage Soup! Any combo of beans, veggies and stock cooked in a pot for a few hours, my favorite combo includes chopped tomatoes, cannellini beans, zucchini, and grated Parmesan cheese.

I love soups. You make it one pot and then serve dinner in a bowl. My familys' favorite is California Chowder. It is my husband's favorite and he hates cooked veggies.
I love a slow cooked roast for a one pot meal. Pair it with a roll and some melted cheese and you have an easy and tasty meal like this Drip Beef. If you feel like going for two pots you can serve it with pasta or potatoes.
Another great one pot is chili, you can do everything in that one pot and you don't need anything else to accompany it! So many recipes out there say they are one pot, but you need a lot of prep bowls before you hit that one pot!
The lentils and rice recipe given to me by my friend Tina and her mom Violet is possibly my favourite recipe EVER. I got this recipe from them many years ago, after one of their wonderful parties with lots of delicious food. Isn’t that the best kind of party? Since then, I’ve made lentils and rice for countless events, including birthday parties, baptisms and potlucks at work. If you know me, there is a good chance I have served you lentils and rice. One of the things I like about this recipe is there is a fair amount of cooking time, but little prep work. You can prepare other dishes while it cooks. It also makes a large quantity, so it’s great for a party. It is deceptively simple with few ingredients. Give it a try. I bet you’ll love it too!
I love Monterey Tortilla Casserole. It is easy to make and freeze and tastes so yummy. It has been a big hit on my blog! It is made with tortillas, chicken, corn and salsa verde.
I love a good one pot recipe but as far as I'm concerned nothing is better than a good pot of chili!
I love to cook, but hate to clean! One-pot meals are perfect for my family. One of my favorite soups anytime of the year is my Shrimp & Veggie Egg Drop Soup. It can not only be made in one pot, it can be made in about 15-30 minutes!
One of my families favorite one-pot meals isn't really a pot so much as a "bag". It is called Cod Ratatouille En Papillote (In Paper) with Herb Salad. I discovered the best way to get my family to eat things like zucchini and eggplant was to try and disguise them or hide them all together. We love fish, so what better to hide the veggies with that a whole side of cod? I figured they would be drooling over the fish before they could even realize there were "hidden" items. I got the shock of my life though, they loved it ALL and ask for it over and over again! I just love the fact that they love something that is healthy, tasty, and not that hard to make!!
We eat gallons of soup in the colder months (or even on colder summer days). Our favorite soups are Creamy Broccoli Soup (vegan and gluten-free), an easy Two Potato Soup (white and sweet potatoes), or a loaded vegetable soup. My kids will eat vegetables in soup that they would never eat steamed on a plate!
My favorite one pot meal is a frittata. Frittatas cook in a relatively short time and are an excellent way to get my family to eat their veggies.
