We all love healthy whole grain pancakes. They are fluffy, and allergy friendly (with no eggs or cows milk) and so tasty. We serve them with warmed maple syrup and they fly off the table!

My husband makes vegan crepes and they are delicious! We set out bowls of fruit and powdered sugar to add to them. It's always something to look forward to on the weekend and fun to mix and match the crepe toppings.

Sunday mornings, my hubby makes Peanut Butter Chocolate Chip Coffee Cake. It's a peanut butter lover's delight filled with chocolate chips and a crunchy PB topping. It's a great smell to wake up to on a Sunday morning!

My family's favorite weekend breakfast is cinnamon toast. Since I'm gluten-free and my son is peanut/nut/sesame/chickpea free, everyone uses their own safe bread. We spread some butter on each slice of bread and then top it off with a mixture of cinnamon sugar. We pop it in the oven on broil for about two minutes and out comes sweet, crunchy perfection. Glass of hot chocolate is optional, but recommended!

We love organic buckwheat (plus banana, sometimes) pancakes, made with an organic egg and organic milk. I like eating them with cottage cheese and apple sauce or strawberry Xylitol syrup, and my husband and son like it with maple syrup.

I now sweeten/bake everything with Xylitol. It's the best natural sweetener, and doesn't harm teeth:

I'm a huge fan of waffles. They aren't very difficult to make, but they feel "special". I always make extra to put into the freezer for a quick breakfast later on. I have shared a fun waffle recipe with you for Apple Cider Doughnut Belgian Waffles....they are simply amazing!!

I love making my family these cute Mini Baked Donuts.Very easy to make, even more fun to eat! They are baked, so they are MUCH healthier than your average donut, but still taste great! Have fun decorating them with a variety of glazes, powdered sugar or sprinkles!

Muffins are always a hit with my family, and this muffin with pumpkin, apple, and pumpkin pie spice is delicious. I make it with a combination of unbleached all-purpose flour and whole wheat pastry flour.

For weekend or holiday breakfasts, pancakes or waffles is what I make for my family! I start with a gluten-free pancake mix, then I replace the milk with hemp milk, and instead of eggs I use Ener-G egg replacer. This combo works with all of my family's food allergies, and they taste great!

It's a healthy take on cream cheese stuffed French Toast. Also, the nice thing about the recipe is that it makes a huge portion, so you can reheat servings for breakfast or snacks during the week.

I developed these banana pancakes to accommodate my son's food allergies, but everyone who tries them loves them! We make them almost every weekend and I freeze the extras for him to eat during the week.
