We love muffins in our home and I have so many different recipes that I rely on. The one that is probably the most popular though are my Chocolate Chip Muffins. My husband and son go mad for them and within two days they are usually gone. I love this recipe because it is so healthy. With whole wheat flour and very little fat in them I feel good about serving them to my family.
My favorite muffin recipe was created through a lot of trial and error! I wanted them to be vegan and free of refined sugar, so that I could feel good giving a few bites to my toddler. Here they are: Vegan Ginger Muffins (mmmm, ginger!)
The Pioneer Woman introduced me to muffins that taste like donuts.
They are breakfast crack. I cannot get enough of these warm, buttery, cinnamony mini muffins.
We also Love muffins in our house as its the easiest grab and freshly baked goods in our GLUTEN FREE household... Gluten free bread tends to go ROCK hard after a day or two so I mix up a hugs batch of batter on a Sunday that gets baked fresh each morning of the week
Take a look at the Recipe here for yummy Gluten -Free Muffins for every day of the working/school week http://www.bettybake.co.za/2012/03/banana-and-yoghurt-muffins-healthy.html
We adore muffins, and have many, many, flavor variations on our house. The trick for me is to make them super tasty while still be LOADED with good for you ingredients, and low in sugar. One example is:
5 Minute Muffins!!
We, also, love muffins. In my book (Welcoming Kitchen: 200 Delicious Allergen and Gluten-free Vegan Recipes) I have tons of recipes that we make often at our house. One of our favorites from the blog, though, is Strawberry Chocolate Chunk Mini Muffins. They're loaded with good stuff: whole-grain oat flour, flaxseed meal, and strawberries.
I love my healthy banana bran muffins - I make them whenever some bananas are begging me to do something with them before I have to throw them out:
And with my whole wheat zucchini and carrot muffins, I get veggies into my son and he doesn't complain:
My favorite muffin recipe usually depends on the day and mood I'm in, BUT if I absolutely had to pick one and only one (really only ONE??), I would pick my Mini Caramel Streusel Cakes. Heavenly mini muffins in just a few bites! Oh my, I'm getting hungry! They are a combination of a coffee cake and a muffin and they're perfect for breakfast, brunch, dessert, snack, ore even a tea party. So many possibilities, so little time! They're made with a cake mix, have a hidden caramel center, and they're topped with streusel! Everything tastes better with a little streusel, don't you think??? They're baked in a mini muffin pan so they take no time at all and I bet they'll be gobbled up in no time at all as well!
I love banana muffins!!! Very ripe bananas have a wonderful natural sweetness, so you can enjoy a moist, sweet muffin with less added sugar. The most requested muffin in our house is my chocolate chip banana muffins. I have created a healthier version of the traditional banana muffin. They are sweet, very moist and scrumptious! It's definitely a kid-friendly recipe. You can always substitute nuts for the chocolate chips. :)
I love moist muffins that use fruit in them to make them super nutritious. One of my faves is from Jillian Michaels - Blueberry Banana Muffins. They're delicious and so good for you! The banana adds moistness and sweetness - naturally. And the blueberries are filled with anti-oxidants. It's a treat that's good for you!
We love muffins at our house! I have several recipes on my blog, and have so many bookmarked that I rarely make the same one twice. However, I have found that muffins are an excellent way to sneak veggies and whole grains into my kids! Just add chocolate chips and they are known the wiser ;) Check out the link for my Amazing Zucchini Muffins! (and they are egg free!)
I think that you will enjoy my Banana Coconut Muffins. They are a great start to the morning. Oh and they are gluten free......YEAH!!!
My go-to muffin has always been banana nut! I love the way these muffins taste and smell, plus they help me use up bananas that have been sitting too long and gone soft. I always add chocolate chips, making these muffins a special treat!
I love all types of muffins! I often try to tweak my recipes a bit to make them healthier to eat for breakfast but still taste like a treat. One of my favorite recipes is Oatmeal, Date and Apple Muffins; not too high in calories, high in fiber and very high in taste!
Chocolate chocolate chip muffins! So much better than the Costco ones; smaller, not too sweet, and are great for a weekend breakfast treat or afternoon snack. The recipe is so easy, even my teenage boys make them!
One can never have enough muffins stocked in the freezer, ready to take to a friend's house, bring along on a car trip or pack in those kids' lunch boxes. I seem to have a love of all things mini when it comes to food so these mini muffins are easy to just pop right into your mouth!
Out of all the muffins we consume around here, this is definitely a family favorite!
Vegan Banana Muffins
We're the Muffin monsters when it comes to making muffins. It's our favourite treat to bake - as it usually just takes 15 minutes to bake. Plus I like it because I often add some good-for-you ingredients in them.
Here's a recipe that's vegan and gluten-free (but you wouldn't know it)
Allergen friendly recipe too ;)
I am always adapting muffin recipes to use allergen-free ingredients (no dairy, wheat, eggs, or butter). One of my favorites is this allergen-free (Gluten-free and vegan) Banana Coconut Muffins. It's a great way to use those bananas that are about to go bad. http://www.learningtoeatallergyfree.com/2011/06/kelapo-coconut-oil-in-banana-coconut.html
My favorite muffins are made with fresh grated zucchini, Greek yogurt, and whole wheat flour. My family loves them in the summertime and I like that they are delicious and almost healthy.
My family's favorite muffin isn't actually a muffin - it's what we call a "breakfast cookie". It's just like a muffin, but the batter is thick enough that it doesn't need a muffin pan. Just plop a spoonful on a baking sheet and bake. The kids love having cookies for breakfast. And since it's filled with healthy ingredients I love it too.
