A great salad that is sure to impress and use summer veggies such as arugula and asparagus is my Shaved Asparagus, Asiago and Arugula Salad!

I have two favorites, and eat them for dinner probably four nights of the week. The first is spinach salad with strawberries, roast chicken (we always have a roast chicken from Costco in our fridge), goat cheese and crispy onions. The dressing is EVOO, champagne vinegar, thyme, and kosher salt. My other favorite is spinach with chicken, mandarin oranges, crispy onions and crispy red peppers, and sometimes I throw a little avocado in too. Dressing is 1 TBS sesame oil, 2 TBS rice wine vinegar, and kosher salt. Y-U-M. I have either with a ciabatta roll and some EVOO on the side. Ohhhh so good.
We love Muskoka Bean Salad! Last summer while traveling in Muskoka we happened upon a cookbook that introduced us to Marty's World Famous Cafe and his famous bean salad. I was intrigued by the cookbook and the promise of delicious food so we made the trek to Bracebridge to check it out. I liked his version but felt it could be even better so when I came home I developed my own recipe based on his. I dialed the heat back, piled on the flavor and made fresh ingredients a main part of the dish. It's an excellent side at BBQs or picnics and makes a great main for lunch. We love it!

Asian Noodle Salad is SO good! I love it in the summer time,b/c it's good cold and it only requires boiling water on the stove to cook the noodles. I could eat this several times a week and never get tired of it! Check out the blog link for the recipe and picture!
I love this fresh Southwest couscous salad made with ripe tomatoes, black beans, sweet roasted corn tossed in a lime - cumin infused dressing and topped with avocados. It's bright, colorful and kids love to eat it with crispy white tortilla chips. Makes a great crowd-pleaser potluck dish!
Sauteed Mushroom and Arugula Salad
1 cup sliced crimini mushrooms
6 cups arugula lettuce
3/4 cup shaved parmesan
1 teaspoon herb de Provence seasoning (or any of your favorite herbs)
1 tablespoon olive oil
1 teaspoon balsamic vinegar
The veggie burger salad is about all I eat for lunch all year, but especially in the summer months. You can use whatever greens you want but I like using a mix that is at least 50% spinach, then I cut the greens up into bite size pieces, top with chopped onions, tomatoes, and pickles. The dressing I use is Karam's Garlic Sauce which I put on the salad, then add the veggie burger and cut it all up to enjoy. For my husband's, instead of the garlic sauce I add shredded cheddar cheese, then place the warm veggie burger on top of the cheese to melt it a little, then put a bit of ketchup and mustard on the burger. When I cut through the burger to make the pieces fork-worthy-size, the 'dressing' gets mixed down into the veggies below. We both love our separate versions.
This pasta salad is perfect for the summer months. You can use your grill to roast the peppers and if you are are lucky and have a garden or a farmer's market nearby, the burst of flavor from the fresh summer peppers is amazing. This is a simple, easy to make salad that brings a WOW factor to pasta salad!
I like salads that can travel easy and can also be a main course! My Tex-Mex Pasta Salad is always a crowd pleaser, and kids adults alike enjoy it! i also like that it can be served hot or cold!
Pasta salad used to be a favorite of mine before being diagnosed with Celiac. So I am always on the search for great pasta salad recipes. Gluten free pasta salad can be tricky. You have to start with amazing pasta for it to work. I have found my brand that works and now I enjoy trying and creating all sorts of gluten free pasta salads. I just recently made a Red Spring Salad with a Strawberry Vinaigrette. It was seriously the best salad we had had in a long time!
My Buffalo Chicken Pasta Salad is one of my favorite Spring/Summer salads!!! It is full of my favorite "buffalo" flavors including fresh chopped veggies, chopped chicken, blue cheese and hot sauce, then tossed with pasta! It's quick and easy to make! It's also great as a side dish or entree and perfect for summer potlucks and picnics!
