My grandson that we have Power of Attorney over while his mother is on deployment has just recently in the past few months been diagnosed with being allergic to eggs also. He gave us a printout with the following information on Peanut and Egg Allergies. Hope it is of some value to you. It has helped us tremendously.



PEANUTS:



COMMON CONTACTS: Artificial nuts can be deflavored peanuts that have been reflavored with a nut, such as walnut or pecan. Mandelonas are peanuts soaked in almond flavoring. Arachis oil is peanut oil. African, Chinese, Indonesian, Mexican, Thai, and Vietnamese dishes often contain peanuts or are contaminated with peanuts in preparation. Many foods in bakeries and ice cream shops are contaminated with peanuts. Many foods are processed on the same equipment as peanuts. Watch for this on labels of canned, packaged, or boxed foods. Peanuts can be found in many candies, chocolates, trail mixes, cereals, energy bars, ice creams baked goods, pet foods, popcorn mixes, snack foods, mixed nuts, and nut butters. Nut butters are only safe if prepared at home using tree nuts not processed on the same equipment as peanuts (almonds, pecans, walnuts, etc.).

SUBSTITUTES: Tree nuts: almonds, cashews, Brazil nuts, pecans, pistachios, hazel nuts, pine nuts, walnuts, etc.

NOTE: Some experts recommend peanut-allergic patients avoid tree nuts as well.

LEAST ALLERGENIC FORMS: None

CHALLENGE FORM: CHALLENGE ONLY UNDER THE DIRECT SUPERVISION OF A PHYSICIAN.





EGG:



COMMON CONTACTS: whole egg of any bird species, egg yolk, egg white, cholesterol-free egg substitutes (Egg Beaters), pastries, puddings, pies, cookies, breads, meat loaf, sausage, mayonnaise, egg noodles, batters for deep fat frying, potato or macaroni salad, tuna or chicken salad, some soups bouillon, marzipan, ice creams, candies, some sauces (e.g. Bearnaise and Hollandaise), some salad dressings, tartar sauce, meringue, cream fillings, root beer, marshmallows, some wines clarified with egg, some baking powders, malted cocoa drinks (e.g. Ovaltine, Ovamalt) and the following terms: albumin, globulin, lysozyme, ovoglubulin, ovomucoid, ovotransferrin, sitellin, silico-albuminate, egg (white, yolk, dried, powdered solids), ovolactohydrolyze proteins, ovomacroglobulin, conalbumin, eggnog, livetin, ovalbumin, ovomucin, ovovitellin, simpleese, surimi, and vitellin. Read the labels on hair care products, skin creams, craft materials, medications and VACCINES. Note: chicken may cross-react and is generally avoided during the initial elimination.



SUBSTITUTES: For each egg required in a recipe, substitute one of these mixtures.

1. 1 1/2 TBSP. water, 1 1/2 TBSP cooking oil and 1 tsp. egg free baking powder.

2. 1 tsp egg free baking powder, 1 TBSP water and 1 TBSP vinegar

3. tsp yeast dissolved in 1/4 cup warm water.

4. 1 tsp. apricot puree

5. 1 TBSP pureed banana

6. 1TBSP. applesauce

LEAST ALLERGENIC FORMS: none if very allergic to egg. Sometimes the egg in breads or pastries in which the egg is very dilute and only a miimum is used can be tolerated.

CHALLENGE FORM: whole egg



I hope this information will be of some help for you and Brock. I know it's very frustrating sometimes trying to figure out what to feed the little guys. I make my own egg-free pastas or buy the wheat kind at NUTTERS, here locally. Check on line for more assistance. I'd like to compare notes with you on different issues such as what his symptoms were before diagnosis and are you aware that he will not be able to have the FLU Shots, MMR Shots, OR the Chicken Pox Immunization. My grandson got Shingles 2 days after having the Chicken Pox Immunization. Just recently he started having seizures on the morning of February 7th, 2009. Good Luck and God Bless.
