My son gets invited to so many birthday parties and we usually attend if possible, anyway I always keep a small JIFFY cake mix in my pantry and pull it out the night before a party. It makes about 12 cupcakes and is so cheap and easy and that way you son/daughter isn\'t left out when it\'s time for cake!! My son thinks he is so special because he has his very own cupcake. I even buy the cupcake pics with his favorite characters and reuse them.\r\n

Its funny that you have mentioned that because I have done something similar. At Naturally Yours Grocery, they can customize bakery orders. So, in the past, Ive requested special cupcakes just for my son if he went to a birthday party or for his own parties. I usually would tell them no eggs, no peanuts, no nuts of any kind, and gluten free.

I think this is a great idea. It makes him feel good at the same time while you are trying to keep him safe. A lot of people dont think about these things if they are not dealing with them on there own.  my son can only drink Soy milk, but he can eat milk products, so it is not as bad, but it does make you think before you go somewhere what do i need to bring so they can have what they need.

I didn't know Jiffy made a cake mix. I've seen the muffin and brownie mixes (although I think they have discontinued the brownie mix). 12 cupcakes at a time is ideal. I usually make a box of 24 and then I have so many left over. My daughter is in kindergarten and it seems as if there is a party every week!! I will keep my eye out for the Jiffy cake mix - thanks for the tip!

I've made cakes from scratch before when my son was allergic to all of the same things. I used rice milk, rice flour and dairy free margarine sticks (Fleischmann's makes some that are good for cooking) instead of milk, flour and butter. I usualyl make a practice one a few weeks before in case I need to tweek anything in the recipe. There are also mixes you buy from www.Allergygrocer.com.

We do the same thing but I usually make them in advance and freeze them. I use egg replacer, soy milk and non dairy margarine sticks to substitute as needed.

Also wanted to say that you can get a local bakery to decorate your cake for you if you explain the situation and they can guarantee it will not have the allergen present or no worries of cross contamination.

Our local bakery is great about accomodating me and we have never had a problem.

I know Jiffy contains wheat, but I am unsure about Soy. Check the next time you grocery shop.

We buy cake mixes from Sweetiecakes.com.  Just add oil, water then bake and viola you have chocolate cupcakes.  They also sell frosting.  All their products are top 8 free.

You use an egg substitution and it only calls for one egg, so instead of the egg use 1 1/2 tbsp. water, 1 1/2 tbsp oil, 1 tsp baking powder. Just follow the directions, but substitute that egg. Jiffy small box is 58 cents. You can't beat that price!!! I make my own icing, too by using powdered sugar, little bit of milk, tsp vanilla and food coloring. I also buy cupcake pics at Publix for 5 cents each and I get Thomas the train, which my son loves!!!

You can also use Pillsbury, and Duncan Hines too, just substitute for the egg. It tastes the exact same!!

I've never tried jiffy, you don't have to use eggs? The mix I usually use is "cherrybrook kitchen" can get it at mothers or henry's. It's really good but exspensive. My daughter can't have eggs or peanuts. I also bring our own cupcake to all birthday parties and on her b-day I make her own pesonal cake and a big regular store cake for everybody else.

I do this a well. Its great to hear I'm not the only mom who does this. I have been doing this since he started eating solids due to his dairy,eggs and peanut allergies. He recently grown out of his dairy but still has the peanut and egg allergies. I use the cherrybrook cake mix (allergy free cake mix) very easy to make and quick. I make the cup cakes then after the cool down I wrap them in wax paper and tape any openings. I put them in freezer and they last for about 2 months. When I need then I take one out let thaw and frost it. They taste fresh. Great for emergency events or gatherings where you know the kids will have teats.
