Chicken Lasagna Alfredo
10 no-boil noodles
16 oz alfredo sauce
3 cups cooked chicken
14 oz can artichoke hearts, drained
¼ cup milk
¼ cup onion (1 small)
1 small red bell pepper
2 cloves garlic
4 cups mozzarella cheese
4 oz crumbled feta cheese
2 cups spinach leaves (fresh)
Mix together milk and alfredo sauce. Spread 2/3 cup of sauce mixture on bottom of 9x13 pan. Top with 5 noodles.
Dice onion, bell pepper, chicken, and artichoke hearts. Mix all of these together and add 3 cups mozzarella and feta cheeses.
Scatter 1 cup of spinach on noodles. Top with ½ of chicken mixture. Top with ½ of the remaining alfredo mixture.
Repeat layers ending with rest of alfredo sauce.
Bake covered @ 375* for 45 minutes. Remove cover sprinkle with remaining mozzarella cheese and bake for additional 15 minutes.
