yea that tuna casserole does sound a little strange, but its always worth a try eh??

The ingredient list seems a little odd....but it tastes amazing! Use spicy salsa to give it an extra kick!
Southwestern Tuna Casserole
1 Tbsp olive oil
1 medium onion, chopped
1 1/2 cups frozen corn, thawed
1 can (10.5 ounces) reduced-fat, reduced-sodiium cream of mushroom soup
1 cup store bought bottled tomato salsa
1 tsp chili powder (optional)
2 to 3 cans (6 ounces each) tuna, packed in water, drained and flaked
2 cups whole wheat pasta, cooked according to package directions
1 cup shredded cheese (cheddar blend preffered)
Preheat oven to 350 degrees. grease 2-quart casserole dish with olive oil and set aside
Place a large skillet over medium-high heat. Coat with the 1 tbsp of oil, and when oil is hot, add the onions. Cook and stir until softened, about 3 minutes. Stir in corn and cook 2 minutes longer to incorporate. Stir in the soup, salsa and chili powder (if desired) until well blended.
Add the tuna and cooked pasta, stirring just to coat. Pour into the prepared greased casserole dish. Sprinkle the top evenly with cheese.
Back for about 25 minutes or until bubbling. Remove from oven and serve immediately,

i like to make a rice and chicken casserole
2 boneless skinnless chicken breasts ( or 4-6 tenders)
1-2 cups cooked rice ( depends on how many you want to feed- 2 cups for 4-5 people)
1-2 cans of cream of chicken soup
1 package of frozed peas (or broccoli)
shredded cheddar cheese
salt and pepper to tase
preheat oven to 350 degrees
cut chicken into bite sized pieces
brown in skillet until no longer pink with 1 Tbs of butter
cook rice according to package directions
cook peas ( i buy the steam in bag ones)
place rice, chicken and peas in casserole dish
add soup, mix well
add salt and pepper and sprinkle with cheese
bake in 350 degree oven for 30 minutes or until cheese is bubbly.

ya ive seen the duggars make this on their TLC show,.lol although i never wrote down the recipe, sounds good, i will def. try thanks!!!!

For Tater Tot caserole you can also use cooked cut up chicken as well.
I use cream of chicken soup and cheddar cheese soup in mine. Its always good no matter how you make it though.

Have you ever made Tater Tot Casserole? I made it for the first time last night and it was an instant hit!
1 lb ground beef (could use ground turkey)
1 bag (small) tater tots
1 can cream of mushroom soup
Cheddar Cheese
Brown the ground meat with onion, salt, and pepper. Stir in cream of mushroom soup, half a can of water or milk to dilute the soup. Add veggies if you want. Spray/grease a 13x9 baking dish. Pour ground beef mixture in the pan. Top with frozen tater tots. Bake on 350 for about 20 minutes or until tater tots are golden. If desired add a little cheddar cheese and bake 5 minutes more until melted.
I added about one cup of grated yellow and zucchini squash to mine. It was fantastic! Best part is my daughter ate vegetables and didn't even know it.

There is a recipe called Green Bean Pie. Sounds a little strange, but truly tastes delicious. It is also very quick and easy to throw together.
1lb ground beef
1 big can of green beans
1/2 cup of spaghetti sauce
salt & pepper to taste
1 can cresent rolls
2 cups shredded chedder cheese
2 eggs
paprika
Cook the ground beef (use salt and pepper to taste...can also use onion if desirable). Drain. Add in green beans until warm. Mix in the spaghetti sauce and set aside.
In a pie pan layout the cresent rolls (you are making a crust). Poke holes with a fork. Mix together 1 cup cheese and 1 egg. Spread mixture over crust. Add green bean mixture. Mix together 1 cup cheese and 1 egg. Spread on top. Sprinkle with paprika.
Bake at 350 for 30-35 minutes.
