Irish Rover's Shepherd's Pie

2 pounds Ground beef, lean

1 cup Onion; diced

1 cup Carrots; diced

1 cup Celery; diced

1 1/2 cup Corn; fresh or frozen

2 cloves Garlic; minced

Salt; to taste

Pepper; to taste

1/2 teaspoon Nutmeg

8 ounces Beef broth

2 tablespoons Butter; mixed with

2 tablespoons Flour

2 pounds Potatoes; cooked and mashed

Butter



Directions:



Cook ground beef in frying pan until brown. Add onion, carrots, celery, garlic, salt, pepper and nutmeg. Lower heat and cook for 10 minutes or until vegetables are wilted. Add beef broth, bring to a boil. Stir in enough of the butter/flour roux to make a thick gravy to bind the filling. Pour into large shallow baking pan and cool. The filling should be about 1-1/2 inches deep.



Cover the meat mixture in the pan with the corn and then top with the hot mashed potatoes. smooth potatoes evenly, brush surface with butter. Bake at 325 F for 35-40 minutes.

Did you know you can make meatloaf in the microwave? It's really good too!



1 lb ground beef

onion chopped

green pepper chopped

1/2 cup oatmeal

1 egg

pepper

garlic

ketchup



Mash everything together (except ketchup) in pie dish. Shape into a circle. (Hole in center) Take toothpicks and insert randomly. Cover top of meat with ketchup & parsley (or any other spice). Cover with saran wrap or wax paper. Cook on high for 10-12 minutes. Enjoy!

just watch the sodium level if using a lot of soup recipes....


i went to this sight to find a pie i remember as a child...

it was a pie crust, top and bottom
ground hamburger, browned
mixed veggies
tomato soup
garlic powder
cooked onions
maybe some Worcestershire sause
i forget what else, but it was delicious!

remember, dont discount a great recipie becusae it has an ingredient you dont like...just leave that out!
i never add salt to anything.
let the kids pick out a few things but cook for the grownups...
if they dont experience, they wont develop a taste and may always be picky eaters

and most important in my mind....
never cook more than one meal for dinner....real food plus another kids meal is unacceptable.
you are not running a restaurant!

Beef Stroganoff....1 lb ground beef, one large jar of Heinz brown beef gravy and 1 pint of sour cream....can even add canned mushrooms. serve over wide egg noodles. yum.
