Katy,
My favorite is pork chops with cream of mushroom soup, dry onion soup mix and water (1 can full). Cook on low for 8-10 hours.
You can always add garlic, onions, carrots, potatoes, and/or mushrooms. I've used white wine instead of water. Double up on the soups/liquids depending on what extra's you add or how much meat you have.
I've also used this combo with beef.

If you like chili, my family always loves this one:
1-2 lb ground turkey or beef browned in a skillet,
3-4 cans kidney beans,
1 can tomato soup,
2-3 cans (15 oz) tomato sauce,
1-2 chopped onions, and chili powder to taste.
After browning the meat, add all ingredients to the crockpot. Cook on high for 3-4 hours or low 6-8 hours. I always check to see if the kidney beans have split. My husband and I have been together for 7 years; this is one of the first dishes I made him, and he asks for it all of the time! :) (Sorry the measurements may not seem very precise. It just depends on how big your crockpot is and how much you'd like to make.) If you have any comments or questions, I'd love to hear them.

Here's a super easy chicken crockpot recipe! 1 lb boneless chicken breast, frozen; 1 dry pkg Italian dressing; 1c. water or chicken bullion. Place in crockpot night before needed or in early morning, cook on low for 10-12 hours. Serve with rice or potatoes and some fresh veggies.
