Anyone know a beef and potatoes slow cooker stew recipe?

My kids are super picky, I am too honestly. I want to make a stew in my slow cooker/crock pot. I am hoping to find one that I can make that is ONLY beef and potatoes.

I don't have a recipe, but I buy stew meat cut it up into smaller chunks, then put salt , pepper, garlic and oil on it, I brown the meat on the oven so I know for sure it's cooked thru, then cut up potatoes and carrots, throw it all in the slow cooker with beef broth and turn it high for 3 hours.

If you are not going to brown the meat I'd probably cook it for 5-6 hours. Then we put it over rice, tastes pretty good.



Sometimes this reminds me more of a chunky soup than a stew, but maybe if you put some cornstarch in it may thicken it up.

This doesn't have potatoes, but it's definitely delicious!

1 eye of round roast (a bit pricey, but can find on sale and is worth it!)
cream of chicken soup

You can dredge roast in flour and brown in a bit of oil if desired. Otherwise, simply put in crock pot and cover with cream of chicken soup. Cook on low around 8 hours (until meat is done). Remove and slice roast and serve with rice or mashed potatoes. The gravy is done...nothing needed. (You can add kitchen bouquet or a similar gravy seasoning to the gravy, but it's not necessary.)

As long as you have enough soup to cover the roast it's fine, and you can always add more soup if you like more gravy. This is the only roast my kids will eat. I have also used stew meat before, cooking it exactly the same way. I guess you could add in potatoes, but b/c we really like this over rice, we just cook the meat and soup.
