anyone know of easy and yummy gluten & wheat free recipies?

I have celiac and crohns diseases, and can't tolerate gluten, wheat, or dairy. I am a supertired mom of a 2 year old and 4 month old, and desperate to find easy recipies for my food, so I can nourish myself like I should.

any advice?

I stumbled in here today as I was looking for Spaghetti Squash recipes. I understand that Spaghetti Squash is gluten free, and have a bunch of Links that I just found, here they are. I hope this is acceptable If they don't load as links, copy and paste them into a search box, and they should come up for you. I just did that with the pancake one and it worked.

Here is a great dessert recipe that I easily adapt to make gluten-free. I made one this weekend and nobody can tell it's gluten -free.

Fresh Strawberry Upside-down Cake
*2 cups fresh crushed strawberries (If not juicy, you can add a little sugar)
*1 (6 oz - large size) pkg. strawberry flavored gelatin mix
*3 cups miniature marshmallows
*1 (18 oz) pkg yellow cake mix, batter prepared as directed on package (I use Bob's Red Mill GF or Betty Crocker GF cake mix)

1. Preheat oven to 325 degrees.
2. Spread crushed strawberries on the bottom of a 9x13 inch baking pan. Evenly sprinkle strawberries with the dry gelatin powder and top with mini marshmallows.
3. Prepare the cake mix as directed on the package and pour on top of the marshmallows. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 to 50 minutes. Cool in the pan for 15 minutes. Run a knife around the pan to loosen the sides, and turn the cake out onto a serving tray. (I don't do this. We just scooped out of baking dish with a large serving spoon and serve with whipped cream or vanilla ice cream)

Optional: You can use other fruit and gelatin flavors to suit your preferences.

Store cake in the refrigerator. Best heated up before serving.

I'm not heavily versed in GF (though my mom has recently gone this route) but a product I use on a regular basis and LOVE and you may already know about is Quinoa products. Quinoa in seed form, Quinoa Flakes (my son loves this for breakfast and I've put it into homemade bread) and Quinoa pasta. All GF. Here is another helpful site: http://www.gicare.com/diets/gluten-free.... Also, is your daughters allergy to ALL nuts or just peanuts? Because you could try almond butter cookies, instead. Almond butter is better for you anyways. I would limit soy substitutes because of the hormones in the soy plant and maybe try almond products instead. Another tip, many people who are allergic or unable to digest cow's milk proteins or lactose can drink goat's milk. It's much more easily digestable and better then the soy, almond, hemp or rice alternatives.

I swear by a few books that really help me deal with my son's gluten intolerance and its food the whole family can enjoy. My favorite recipe book is written by Robyn Russell and the names of her two books are 'Gluten free and easy' and 'more gluten free and easy' . I substitute and diary with soy products and other gluten free options that we all get to know when dealing with this kind of diet. I hope this is helpful... oh and remember its so good these recipes the whole family will love them!

My youngest was on a dairy and gluten free diet for 2 years and being a working mom with 3 kids I didn't have time for special diets so I made food we all could eat and served anything with gluten or dairy as a side dish for the older kids and my husband. Most soups and stews worked well. supplying all the protien and veg. Roasted meat or chicken/turkey with roasted root veg was also good. Both are one pot cooking and can make more than one meal. They do take time so do it the night before and then you know you are free the next day. Salads, if your crohns disease allows raw veg. Choose the stuff you can eat and then make it for everyone. Grilling things including veg. on the BBQ usually is liked by all. Adapt what you know like spaghetti squash instead of pasta with what ever sauce you can eat. You have a tough combination.
