INGREDIENTS:
1 cup rolled oats
1 cup milk
2 cups all-purpose flour
1/2 cup lightly packed brown sugar
1/2 cup granulated sugar
1 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup butter or margarine, softened
2 eggs
2 tsp vanilla extract
2 cups mashed bananas
1 cup chocolate chips (optional)
INSTRUCTIONS:
Preheat oven to 375 F. Grease two 12-cup muffin tins. In a bowl, combine oats and milk. Set aside to soak. In another bowl, combine flour, brown sugar, granulated sugar, baking soda, salt, cinnamon and nutmeg. Add butter, eggs, vanilla and bananas to oatmeal mixture; stir until thoroughly combined. Add mixture to dry ingredients; stir just until moistened. If using, stir in chocolate chips. Spoon batter into prepared mfufin cups, filling about 3/4 full. Bake in preheated oven for 20 minutes or until muffins are firm to touch.
Yields 2 dozen muffins.
