Chicken curry. The longest parts are the rice and cooking the chicken. You can cut that time down by using precooked chicken. I use leftovers from roasted chicken/turkey.

We don't like the texture of celery so I grind up about a tsp of celery seed instead. We add it in with the rest of the spices.

1/4 cup butter
1/4 cup chopped Onion (I use about half of a medium)
1/4 cup flour
1 Tbsp curry powder
1/2 tsp ginger
2 cups Milk
2 cups roast chicken/turkey thickly shreaded
1/4 cup celery chopped
1 cup apple chopped and unpared

Melt the butter in a large sauce pan on med-high heat. Add the onions and cook until translusent (about 5 min). Blend in flour and seasonings until it turns into a paste (shouldn't take more than a minute). Remove from heat and gradually wisk in milk. Once incorperated return to heat and cook until the mixture thickens (we use skim and it takes about 7-10 minutes). Add the cooked chicken/turkey, apple, and celery. Let those cook for about 5 min. Serve.

If using raw meat cube and cook it in the butter until no longer pink, then add the onions and follow from there.
