cheap and easy "un-fried" rice

I was trying to use things up in the pantry and fridge before Christmas to save money and make room! I had a tin of store brand cream of mushroom soup (low fat), low sodium soy sauce, a package of uncle bens ready to eat basmati rice, minced garlic, baby carrots, a small tin of mushrooms and a head of broccoli. I added 1 chicken breast cut small to the mix. Here's what I made!

Cut the chicken, broccoli and carrots small. Drain mushrooms. Heat small bit of oil in non stick pan, add chicken, soy sauce and garlic. Brown and add carrots, broccoli and mushrooms. Lower heat and put lid on to steam for a few mins. Check that nothing sticks! Add soup and stir then cover and let simmer for about 5 mins. Add rice and a bit more soy sauce until desired taste. Add black pepper, stir and add rice. Mix well, cover and let simmer 3-4 mins. Stir and serve!

I would have added onion if we had any and maybe some toasted nuts (peanut, cashew, etc) and would be awesome with a sprinkle of sesame seeds!

It's very adaptable and tastes like fried rice without the extra oil!

this is what I make once a week..add any veg on hand...or any meat/meatless....kids love this..grandkids ask for more
