I have a white chili that I make, I use homony instead of beans.
1 1/2 pounds skinless, boneless chicken breast halves - cubed
1 bunch green onions, thinly sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
4 fresh jalapeno peppers, seeded and minced
1 clove garlic, minced
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon dried sage
1/2 teaspoon ground cumin
1/2 teaspoon ground white pepper
1 tablespoon olive oil
3 tablespoons butter
1/4 cup all-purpose flour
2 cups chicken broth
2 cans of homony (white)
serve with corn bread. . . .

Hey Rachael!
I have a recipe for a beanless chili that I hope you will like. I got it out of my Busy People's Low-Carb Cookbook. They also have a bunch of free recipes on their Cooking for Busy People's website. Enjoy!
Spicy Bean-less Chili
1 pound ground eye of round
1/2 cup chopped onion
2 tablespoons minced garlic
2 14oz cans stewed tomatoes with green chilies
1 15oz can fat-free beef broth
1 teaspoon chili powder
1 teaspoon ground cumin
In a large, nonstick soup pal add the meat, onion, garlic, stewed tomatoes, beef broth, chili powder, and cumin.
Cook over medium-low heat until it comes to a low boil and boil for 5 minutes.
Serve hot.
Yield: 5 1-cup servings

I don't like beans in my chili, so i simply leave them out of my basic chili recipe. warning: i like my chili thick.
1 lb. ground beef
1/2 green pepper, chopped
1/2 onion, chopped
1 packet chili seasoning
1/2 lb. elbow macaroni
1 medium size can tomato sauce
1 medium size can diced tomatoes (i like the kind mixed with green chilis)
3-4 cups water
chili powder for extra heat
brown the meat in a skillet along with the pepper and onion. drain off the grease. transfer meat mixture to lareg pot. add tomatoes, tomato sauce, macaroni and water. bring to a boil and then turn to low and simmer until noodles are fully cooked. add chili powder for as much heat as you like. like i said, i make my chili thick, so if you don't like it that way, add more water.
