If you have a slow cooker, this White Chicken Chili is amazing.
3 15-15.5 oz cans Great Northern, Pinto, or Cannellini (white kidney) beans rinsed and drained. [you can substitute any kind of canned beans you like. These are just suggestions since they're white beans]
2 1/2 cups chopped cooked chicken [I just cut up a whole rotisserie chicken]
1 cup chopped onion (1 large)
1 1/2 cups chopped red, green, and/or yellow sweet pepper (2 medium)
2 fresh jalapeno chile peppers, seeded and chopped [dont worry, it doesnt come out spicy at all. I actually add a little bit of cayenne to mine]
2 cloves garlic, minced
2 tsp ground cumin
1/2 tsp salt
1/2 tsp dried oregano, crushed
3 1/2 cups chicken broth
Shredded monterey jack cheese (optional)
Broken tortilla chips (optional)

1. In a 3 1/2 or 4 quart slow cooker stir together the drained beans, chicken, onion, sweet pepper, jalapeno pepper, garlic, cumin, salt, and oregano. Stir in chicken broth.
2. Cover and cook on low heat setting for 8 to 10 hours or on high heat setting for 4 to 5 hours. If desired, top each serving with shredded cheese and broken tortilla chips. [in my opinion, it comes out better if you cook it on low. It takes more time, but its totally worth it.]

I make chili in the crock pot. Basicly it's left over chili.

I add in left over meats, steak, hamburger, turkey, bacon, chicken, pretty much anything other then pork. I then add two cans diced tomatoes, one can tomato soup (the heart healthy), and two medium diced onions. As for spices, 2 tbl. ground coriander, 3-4 tbl smoked chili powder, 1 tbl. minced garlic and cayenne (to taste) for a kick. I set the crock pot on low then about 5 hours later I add half a 12 oz package of corn, I also taste and add any more spices that it might need as well at salt and white pepper (I like the flavor better but black works just as well). It then cooks for another hour.

My husband hates beans so we don't add any but if you decide to add the canned with the corn. As for dried you would need to soak it for about 30 minutes (depending on the bean) and put it in at the beginning of the cook time.

We like ours really spicy so we use spicier powders. I've also added diced carrot.

Easy (Vegetarian) Chili

Chili powder
Cumin
Salt and pepper
2 Tbsp. vegetable oil
1 medium onion, diced
1 green pepper, diced
1 package of veggie ground round (or 1 lb of any ground meat)
1 can stewed tomatoes, diced
1 can stewed tomatoes, crushed
1 can red beans
1 can baked beans in maple syrup
1 can mushrooms (if desired)

In a large pot, fry onion and pepper in vegetable oil. Add ground meat (or vegetarian equivalent). Once meat is cooked add chili powder (however you like it), cumin (1 Tbsp), salt and pepper. Add all canned veggies and beans and let it cook over low heat for at least 20 minutes, the longer the better. Can be served with sour cream and grated cheese. Yummy!
