I use the garden varity spiral noodle, chopped carrots, celery, artichokes(pickled in a jar), olives, feta cheese, pepperoni slices and italian dressing...SO good! You can add any other veggies or omit veggies to fit your taste. This is a very versatile recipe. ENJOY!

Easiest Italian Pasta salad~3 boxes Rotoni noodles, regular or the bicolored, 2 bags of frozen mixed stir fry veggies, 2 bottles of Italian Salad dressing and either 1 package of pepperoni or 1/4 lb of Salami (which ever is on sale!) Cut the pepperoni in half or cut the Salami in 4 pieces. Then boil pasta, before draining put the veggies in the bottom of the strainer then drain the pasta over it. Run cold water over the noodles and dump into a large bowl, add meats and dump in Italian dressing stir and then put in fridge for at least 3 hours before serving. It will disappear just as fast as it was made.

Ive been making an orzo salad this summer that everyone is crazy about. Run the orzo pasta under cold water after cooking. Add chopped up green. red & yellow pepper (whatever you like), red onion, broccoli (I steam the brocoli a little so its not so raw - mix it all together in a large bowl. For dressing I mix olive oil and lemon juice - usually even parts but I like it more lemon tasting - oregano, salt & ground pepper - put dressing on right before serving - its light and low fat - home run!!!

Hi there!
I use any kind of pasta that I like. Run the pasta under cold water after boliing, this will help to mix everything and start the chilling process. MIx mayo and mustard (3 to 1 ratio-so more mayo than mustard and you can use Frenchs or dijon). Add olives, egg, celery, salt ans pepper. And I also put chili powder in mine- it's not hot, just gives it that more creamy taste with the mayo.
