2 tablespoons reduced fat cream cheese
1 tablespoon basil pesto
Black pepper to taste
4 boneless skinless chicken breasts
1 egg white
Half a cup dry breadcrumbs
2 teaspoons extra-virgin olive oil
1.Preheat oven to 400 degrees farenheit. Spray baking dish with cooking spray.
2. Combine cream cheese, pesto and blk pepper in a bowl.
3. Slice chicken breast horizontally, nearly through to opposite side.
Open each breast and put 1 tablesoon of the cr cheese filling in center. Close breast and press together around edges.
4. Lightly beat egg white in bowl. Holding each chicken breast together, dip it in egg white, then dredge in the breadcrumbs.
5. Heat oil in a large skillet over med heat. Add Chicken breasts, cook until brown on one side, about 2 minutes. Place chicken breasts, browned-side up on prepared baking dish. Bake until chicken is no longer pink in center, about 20 minutes.
I found this recipe on EatingWell.com and tried it the other day, entire family really liked it, even my middle-school aged daughters. It was very quick and easy to make!
