8 potatoes, peeled and cubed

8 oz cream cheese

3-14.5 oz reduced sodium chicken broth

1 can cream of chicken soup

1/4 t. pepper

carrots, chopped

celery, chopped





1.Put potatoes in crockpot.

2.Combine the cream cheese, chicken broth, soup, and pepper. Add this mix to the crockpot.

3.Cover and cook on LOW 8-10 hours or one HIGH 3-4 hours.

4.After cooking time, mash the potatoes if you want soup to be thicker.

Russian chicken - delicious and SUPER easy.

6-8 Chicken thighs (bone in)
1 jar Apricot preserves
1 8 oz bottle of Russian Dressing (I use Wishbone)
1 packet Onion soup mix.

In the morning, I put the chicken pieces frozen from the freezer right into the crock pot. Then I mix the ingredients and pour over the chicken and then put it on low for 8 hours (if you are home, mix the chicken a bit during mid day to ensure that all the pieces can cook evenly). By the evening, dinner is ready. Serve over hot rice and steamed veggies on the side. :)

you could make a pot roast with potatoes and carrots like beef stew but home-made =)
