My husband likes these. They're a little dry when making, but he says they taste fine when baked. The Splenda website has a lot more recipes.

Splenda Peanut Butter Cookies

¼ cup butter, softened

1 cup creamy peanut butter

1 egg

2 Tbs. honey

1 tsp. vanilla

1 cup Splenda Granular

1 ½ cups flour

½ tsp. baking soda

½ tsp. salt

Preheat oven to 350 degrees.

Beat butter and peanut butter with an electric mixer until creamy. Add egg, honey and vanilla. Beat on high speed for approx. 1 ½ minutes. Add Splenda and beat on medium speed until well blended, approx. 30 seconds. Slowly add flour, soda and salt to peanut butter mixture, beating on low speed, until well blended. (Mixture may be crumbly.)

Roll level tablespoons of dough into balls and drop onto a cookie sheet sprayed with nonstick cooking spray. Flatten each ball with a fork, pressing a crisscross pattern into each cookie. Bake 7-9 minutes or until light brown around the edges. Cool on a wire rack.

Yield: 2 dozen cookies
