Ok, so here's the problem. Right now there is about 3 or 4 recipes that my whole family will actually eat......everyone likes different things and i'm about to lose my mind every night at dinnertime. Plus I'm a pretty lousy cook. Does anyone have any simple dinner ideas that are apropriate for a family of four....the kids are 3 and 1. Some things to keep in mind....my husband and 3 year old daughter hate vegitables no matter how hard I try, and my husband hates anything creamy.....sour cream, cream of mushroom....that kind of thing. Help....I can't keep cooking multiple meals or letting dad and daughter eat cereal for dinner cuz they don't like anything that I happen to make.

my husband is the same way. i had a dietician tell me its your responsibility of WHAT to make and their responsibility how much and if to eat. Always put a vegetable on the plate, they will learn to eat it. never force them to eat and never make them something separate. They can complain and refuse to eat but if thats what it is they will learn to like it! My husband would only eat hotdogs, macaroni and cheese, and cheese enchiladas in only a greenchili sauce when i met him. He now eats almost anything! also use a food processor and grind up veggies and hide it in spaghetti and use whole grain (not whole wheat) noodles and you cant even tell the difference.


terriyaki chicken

1/3 cup soy sauce
1/2 cup brown sugar
1/2 cup orange juice
3 green onions or 1/2 sweet onion chopped
1 garlic clove
1-2 lbs chicken thighs

put thighs in crockpot. mix all other ingredients and put over chicken. cover and cook on low for 4-6 hours. Serve over rice. I usually make some sort of veggies on the side.

Orange Chicken

1 lb chicken breast cut into strips
1/4 cup Asian toasted sesame dressing
1/4 cup orange juice
3 cups frozen stir fry veggies
3 cups hot, cookes rice
1/4 cup chopped peanuts (optional)

Heat pan medium hi. Add chicken, stir fry 5-7 minutes or till done. Stir in dressing and orange juice and bring to a boil. Add veggies. Cook 5-7 minutes or until heated thru stirring occasionally. serve over rice and sprinkle with nuts, if desired.

Southwestern skillet

1 tbs olive oil
1 1/2 cups green bell peppers (chopped)
3 garlic cloves chopped
1/2 can of rotel tomatoes (diced tomatoes and green chilis)
2 cups unsalted canned black beans
1 1/4 cup water
2 cups cooked brown rice
1/4 cup cilantro chopped
1/2 cup colby jack cheese

coat the bottom of a large pan with oil. Cook green peppers and garlic over high heat for 1-2 minutes. Add tomatoes, chilis, beans and water. mix well and bring ingredients to a boil. cook until the water has evaporated and then reduce heat to medium low. stir in rice and cilantro. cook for 3 minutes. remove from heat, top with cheese and serve.

Note: i usually just use 1 bell pepper, and omit the cilantro. Keep in mind a bean and a rice make a complete protein like a meat. Beans have the protein and rice has the iron. oh and i dont like beans at all...but this is yummy!

I make a taco skillet dinner and my child loves it! all i do is i brown one pound of hamburger, add one cup of salsa, one can of tomato soup and water and let that boil and cook and then at the end i stir in some cut up tortilla shells and shredded cheese! its fast, easy and fantastic! (i think!)

Squash and Apple Casserole would be another winner, too cause it's sweet! Has brown sugar, cinnamon and nutmeg, etc. Requires a bit of peeling and chopping but so yummy!

Make your own homemade tomato sauce! Start with finely diced carrots, celery, onion and garlic. Let them saute on med heat in a little olive oil and a tbsp of butter until cooked through. Add a can of tomato sauce (plain), half a can of all natural low sodium vegetable broth and half a can of tomato paste (this is approx. as I don't write things down so play with the sauce consistency, to thicken it up add more tomato paste, to thin it add some broth). Add 1 tsp dried basil, 1/2 tsp dried oregano, 1/2 tsp garlic powder, salt and pepper. Let sauce cool and put into a blender. *If the sauce is still hot when you put it in, you have to leave the center part of the lid out and cover with a towel because it will bust the lid off otherwise and splash up!* Blend everything until no more lumps are noticeable. As long as they don't witness you putting the veggies in, they'll never even know they're there!. Serve with some Ronzoni Smart taste spaghetti. If you like meat sauce, while your making the sauce, fry up some ground turkey breast, lean beef or ground buffalo (very tasty, better then beef to me, better for you, but a little pricey), what ever your preference. Once you have pureed the sauce add it in with the meat (if using) to warm it back up and then add to the cooked pasta and mix. Do you use a crockpot? I have a lot more recipes.
