We are tired of our every day normal dinner time meals and are looking for some new ideas/recipes.
Please let me know what your favorite or signature meal is at dinner so we may also try it! Doesnt matter if its more on the expensive side to make or if its budget friendly, anything that is tasty works for us!

I have a great one for you, my mom made it all the time for me when I was little and it is a one dish meal. We call it Pennykamp's Casserole 1 lb of ground beef or ground turkey brown and drain any grease, 1 lb macaroni or a box of shells boiled to your liking, 1 1/2 lb sharp cheddar shredded, 1 chopped yellow onion, and 1 large can of diced tomatoes, 1/2 stick of unsalted butter, 1-2 cups Italian bread crumbs and 1 cup sour cream. Mix all except the bread crumbs together in a large bowl, season with salt and pepper. Put into a large glass baking dish, sprinkle bread crumbs on the top and drizzle with olive oil. Bake for 1 hour at 350. I hope you enjoy it, it is my son's favorite.

Spaghetti Sandwiches:
Garlic French Bread open on Baking pan
add spaghetti, beefy spaghetti sauce and lots of cheese to the bottem halves and bake until the cheese melts. YUM!

Easy Chicken:
*works with any chicken parts with skin
lay pieces, bottoms down, on aking dish. pull skin away from meat to create a pocket and insert a dollop of butter. season with salt, pepper (sometimes I used paprika too) and ake in oven at 350F for however long it takes the chicken parts to cook fully (approx 25-35 min). My husand loves this and it's the easiest way I know to make chicken. I make whatever we have as sides...corn, pasta, bread, potatoes, whatever.

A very yummy roast in the oven. I use this in the winter as it heats of the house because of an hour in the oven.

Take tin foil and lay it both ways on a cookie sheet. leave plenty left over to go around and seal the top about an inch or two above the roast. ( think steamed)
then lay the roast in it, put a small can of cream of mushroom soup on top and sides, a packet of onion soup mix sprinkled over that. seal it all up and stick it in the oven for about an hour at 350 F.

It's very tender and flavorful. The boys love it. I use steamer bags of potatoes and carrots for a more traditional side, but the boys love Mac and cheese. so I tend to go that way.


another great one is stuffed shells.

1 16oz of ricotta cheese
2 cups of Italian style bread crumbs
2 raw eggs( can be omitted for allergies without a taste change just helps keep everythign stuffed together better)
mix in a bowel and stuff cooked shells. place them in a baking dish, cover with a marinara ( I love emerils ) then top with mozzarella cheese and bake for about 20 min on 350 F.

corn beef pie...get corn beef and bake beans clove of garlic mash together put it in a oven dish...boil potatoes and when soft mash with buter and a little milk or cream...once smooth spead over the tip of the beef and beans completly cover...then grate cheese on top and sprinkle mixed herbs put in the oven 180 or gas mark 6 for 20mins...serve with some vegtables...my kids love this dish :0)

We just made this today... my 4 year old practically made the whole thing! Potato soup... boil as many potatoes as you will need (depending on how many are in your family) in water for about 30 minutes or until they are soft and fall apart when you poke w/ a fork. Then drain and mash them and take out as much skin as you want (leave some in is ok). Then put it back to heat and add soup broth and heavy whipping cream until it's the soup consistency you want, add your favorite cheeses and enjoy with crackers! My daughter loved it and ate her whole bowl!

Crockpot Recipe

Chicken breast or tenders on the bottom of crock pot.

Mix a can of cream of mushroom soup, 1/2 package of cream cheese with chives, 1 pkg of dry Italian dressing, 1/2 c. white wine (or water). Pour over top and cook for five hours. Serve over rice, noodles or potatoes.

Not submitting a recipe, but an idea for you. I had the same problem a while ago. So, I asked everyone in my extended family to give me recipes + photo, and then I made a family cookbook from Tastebook for everyone for xmas gifts. It turned out to be almost 100 recipes. I was looking for simple, everyday dishes, but of course most people turned in their best recipes. This way family recipes are not lost, and most of my meals come from this book! It's been a treasure, especially since my mom passed away earlier this year.

I chop up meat like chicken, pork, or beef into cubes and cook till done, add a couple splashes of worchestshire sauce, a can of cream of mushroom, garlic salt, and whatever green veggie (green beans, broccoli, sweet peas) and toss it over rice, noodles, or mashed potatoes. My stepsons eat it like it is going out of style. Then just add french bread.

I agree that Pampered Chef have some great recipes if you're looking for inspiration, they've got loads on the website and they change them occasionaly too. One of my PC colleagues has been experimanting for the kitchens and came up with a pumpkin soup that is done completely in the microwave.

1/4 pumpkin chopped into small cubes (you can use butternut squash instead if you have problems finding pumpkin)
1/4 onion, diced
1/4 leek, diced
1 veg stock cube mixed with 1pt water
1 carrot, diced
1 potato diced

dice onion and leek, put into PC rice cooker (or other microwave cooker) and micro for 4 mins. Add pumkin, carrot and veg stock. Put back in micro for 14 mins. Check veg is soft then liquidise if desired. Add cream or creme fraiche if liked

Hi Tana,

This is my family's absolute favorite! It's from Pampered Chef's quick meals.

I skip the jalapeno and use a splash of milk instead of the heavy cream. It's ready in about 20 minutes!

Zesty Ravioli Skillet

1/3 cup (75 mL) heavy whipping cream
4 cups (1 L) loosely packed fresh baby spinach leaves
6 oz (175 g) provolone cheese, grated
1 tbsp (15 mL) olive oil
1 small jalapeño pepper, seeded
3 garlic cloves, pressed
2 cans (14.5 oz/398 mL each) diced tomatoes with onions, undrained
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) coarsely ground black pepper
1 pkg (24 oz/700 g) small frozen cheese ravioli (about 65)

Measure cream using Easy Read Measuring Cup. Wash spinach in large Stainless Mesh Colander; drain. Grate cheese using Ultimate Mandoline fitted with grating blade. Set aside cream, spinach and cheese.

Add oil to (12-in./30-cm) Skillet; heat over medium-high heat 1-3 minutes or until shimmering. Finely chop jalapeño with Food Chopper. Add jalapeño to Skillet; cook and stir 1 minute or until crisp-tender. Press garlic into Skillet with Garlic Press; cook and stir 15-20 seconds or until fragrant.

Add tomatoes, salt and black pepper to Skillet; cook and stir with Bamboo Spatula 1-2 minutes or until simmering. Add ravioli; stir to coat. Cook, uncovered, 4-5 minutes or until tender. Stir cream into Skillet. Cook, uncovered, 1-2 minutes or until simmering. Sprinkle spinach over ravioli; cook, covered, 1 minute or until spinach starts to wilt.

Remove Skillet from heat. Top with cheese; cover Skillet and let stand 1-2 minutes or until cheese is melted.

One of our fav's is Hungarian Chicken Paprikash

You'll need:
-5/6 chicken thighs (they're usually big so 1-2 per person, this'll feed 3/4)
-1 large onion, chopped
-1 large red pepper, chopped OR 1 jar roasted red peppers, drained and chopped
-1 medium tomato, chopped
-1 can chicken stock
-3-4 tbsp SMOKED or SWEET paprika (must say either word on label or won't taste right)
-3 heaped tbsp sour cream (must be full fat or will separate)
-2-3 tbsp bread crumbs

Method:
Heat large skillet to medium high. Add small drop of oil and add onion and peppers (if using jarred, do not add at this time). Cook onions until translucent and starting to brown slightly. Remove and set aside.

Brown chicken, cooking skin side down first. Once skin browned through, turn and cook other side (about 10 mins more).

In large pot add chicken stock, paprika and salt and pepper. Head over medium low heat, stirring until paprika mixed well and mixture starting to warm up. Once hot, add chicken and top with onions, peppers and tomatoes. Cover and cook 2-3 hrs on low simmer.

Just before serving, remove chicken from pot, add sour cream and stir until mixed. Then add breadcrumbs 1 tbsp at a time until desired thickness. Return chicken, coat and serve.

We love this over sweet and white potato mash, also good served over rice! To add more flavor to rice, add chicken stock cube to rice while cooking.

We like Shepard Pie(China Pie)...Bbq chicken legs,mashed sweet potatos with green beans is a hit with our 3yr old...I am also a fan of crock pot (all in one) meals, you can google recipes for this. They are quick, easy and delicious! Let me know if I can help more :)
