Hey Geri, I thought of my Busy Peoples Super Simple 30-Minute Menus Cookbook. It is set up so you can get the recipes for an entire meal! It has a grocery list, supply list and time table for the entire meal. This is one of my favorites! I hope you enjoy it! I also found a bunch of free recipes on the Cooking For Busy People website.





One Pan Italian Chicken Noodle Casserole



The blend of fresh garden squash and zucchini is wonderful with this delicious Italian Chicken casserole. It is a great spin off of the traditional chicken casserole seasoned with Italian herbs. LuAnne Surgeson, a big thank you to for this idea. We were able to come up with a super simple, time saving home-style casserole with only a fraction of the calories that your momma would have made. You’re going to love it!



One Pan Italian Chicken Noodle Casserole

One Pan Italian Chicken Noodle Casserole

Calories 371 (9% fat); Total Fat: 3g; Cholesterol: 53mg; Carbohydrate: 53g; Dietary Fiber: 4g; Protein 29g; Sodium: 823mg

Diabetic Exchanges: 3 1/2 starch, 2 1/2 very lean meat



1 pound stir fry chicken breast

2 3/4 cup chicken broth

1 (10.75-ounce) can 98% fat-free condensed cream of chicken soup

4 cups No-Yolk noodles, uncooked

1 (7-ounce) can sliced mushrooms, drained

1 tablespoon Italian seasoning

1/4 cup reduced-fat parmesan style grated topping

Yield 6(1-cup) servings

Calories 22 (0% fat); Total Fat: 0g; Cholesterol: 0mg; Carbohydrate: 4g; Dietary Fiber: 1g; Protein 1g; Sodium: 328mg

2 small green zucchini

2 small yellow squash

10 grape tomatoes

1/4 cup fat-free Italian salad dressing

1 teaspoon Canadian steak seasoning (Tone’s)

1/4 teaspoon seasoned salt

Yield 6 (2/3-cups) servings

1 (7.5-ounce) package buttermilk biscuits (Pillsbury)

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon garlic salt

30 minutes before dinner, start the One Pan Italian Chicken Noodle Casserole by spraying a 12-inch non-stick saucepan with non-fat cooking spray. On high heat, brown 1-lb stir fry chicken breast about 5-minutes.



25 minutes before dinner, remove the chicken from the pan and set aside. Add to the same saucepan (you removed the chicken from), 2 3/4-c chicken broth and 1 (10.75-oz) can 98% fat-free condensed cream of chicken soup, stir and bring to a boil for about 2-minutes.



Place 4-c No-Yolk noodles into boiling mixture, return to a full boil and cover; cook for 10-minutes stirring frequently.



20 minutes before dinner, start the Italian Squash Medley by spraying a 12-inch non-stick skillet with non-fat cooking spray and pre-heat pan on medium heat.



Slice 2-small green zucchini and 2-small yellow squash and add to pre-heated skillet. Add 1/4-c fat-free Italian salad dressing, 1-t Canadian steak seasoning (Tone’s) and 1/4-t seasoned salt, cover and cook 10-minutes.



15 minutes before dinner, reduce heat to low under the chicken casserole, uncover cooked pasta and add the pre-cooked chicken, 1 (7-oz) can sliced mushrooms and 1-T Italian seasoning, cover and let simmer for 5-minutes.



Pre-heat the oven to 350-degrees.



Generously spray the baking sheet with non-fat cooking spray. Set aside.



13 minutes before dinner, stir in 10-grape tomatoes to the squash, cover and continue cooking.



Start the Italian Buttons by cutting each of the 10-biscuits into 4-equal parts; then roll each piece into a ball and place on prepared baking sheet. Spray each biscuit ball with non-fat cooking spray and sprinkle with 1-t Italian seasoning, 1-t garlic powder and 1-t garlic salt.



10 minutes before dinner, turn the heat off under the pasta, stir one more time. Sprinkle 1/4-cup reduced fat parmesan style grated topping over the pasta and cover. Let set on burner until dinnertime.



Turn the heat off under the Italian Squash Medley; stir one more time, cover and let set on the burner to keep warm until dinnertime.



9 minutes before dinner, place prepared baking sheet in the pre-heated 350-degree oven and bake for 8-minutes.



2 minutes before dinner, place the skillet of One Pan Italian Chicken Noodle Casserole and the Italian Squash Medley on hot pads on the dinner table.



1 minute before dinner, remove Italian Buttons from oven and place in a medium basket on the dinner table.



Now sit back, relax and enjoy dinner.

Hi there, try this one! Good for bribery with the kids in winter especially!

Baked Choc Custard!

425ml milk; 150ml single cream; 50g dark choc; 50g caster sugar; 3 eggs;

170dec C pre heat oven. Heat milk, cream, choc & sugar in saucepan. Beat eggs in large bowl. Pour mix on to the eggs & stir well. Strain into 1 litre ovenproof dish & stand in a baking tray. Half fill baking tray with hot water & bake in oven for 40 mins or until well set. Serve hot or cold with pouring cream or more milk!
