Does anyone know of any good vegetarian recipes that don't take a lot of time up in the kitchen?

Plenty!

What do you like?

Here is one I do a fair bit:

Saute veggies. Add crushed ramen noodle (2 packs for 4 hungry people). Add a large handful or two of salted, deshelled sunflower seeds, and a bottled dressing of your choice (terriyaki). Tastes good hot or cold. About 15 minutes work.

Veggies wraps are good - avocado or hummus plus veggies rolled in a wrap. 5 minutes work.

The cheese raviolli and tortellini (not sure if I spelled them right) with sauce is always good. Also, Boca burgers are very easy. Boca crumbles can be used in any recipe that calls for ground beef.

Healthy Vegan Chocolate Mousse:

2 Avocados
1/2 cup Agave Syrup (or Maple, Stevia, honey, etc, whatever your favourite sweetener is, just adjust amounts accordingly)
1/2 cup organic cocoa powder
Vanilla (opitonal)

put all ingredients into a food processor or blender and blend until smooth!
It's so creamy and delicious and your kids won't even taste the avocado! ;-)

Even better if you serve it with some fresh berries or other fruit! ;-)

1 Lenders Onion Bagel
1 Morning Star Farms Griller - original
1 slice of your favorite cheese
butter spread of your choice

*Toast bagel and spread with butter if you desire
Microwave griller until hot
Assemble with cheese as you would a hamburger.

You can also use grillers in place of a ground meat patty as in a burger. Morning Star Farms is a wonderful meatless product.
