I have one that I have made for my Sunday School class and all seemed to like it.
|/2||cup chopped zucchini|
|1/2||cup chopped tomato|
|1/2||cup chopped onion|
|2||tablespoons grated Parmesan cheese|
|1/4||cup Bisquick Heart Smart® mix|
|1/2||cup fat-free (skim) milk|
|1/4||cup fat-free egg product or 2 egg whites|
|1.||Heat oven to 400ºF. Spray 8x4-inch loaf pan with cooking spray. Sprinkle zucchini, tomato, onion and cheese in pan.|
|2.||In small bowl, stir remaining ingredients until blended. Pour over vegetables and cheese.|
Bake uncovered about 33 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Scramble 12 eggs with 2 cups of milk, place in a 13x 9 pyrex and bake at 400 degrees for 45 minutes. I also have browned onions and added spinach to the scrambled eggs. You can also add cheese on top, I usually do about a cup of cheddar and
mozzarella. You can also make it in half in a 8x8 pan.
