I have one that I have made for my Sunday School class and all seemed to like it.

/2 cup chopped zucchini
1/2 cup chopped tomato
1/2 cup chopped onion
2 tablespoons grated Parmesan cheese
1/4 cup Bisquick Heart Smart® mix
1/2 cup fat-free (skim) milk
1/4 cup fat-free egg product or 2 egg whites
1/4 teaspoon salt
  Dash pepper

1. Heat oven to 400ºF. Spray 8x4-inch loaf pan with cooking spray. Sprinkle zucchini, tomato, onion and cheese in pan.
2. In small bowl, stir remaining ingredients until blended. Pour over vegetables and cheese.
3.

Bake uncovered about 33 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

I actuallyl got this from Bettycrocker.com...love that site.  There are lots of easy yummy recipies :0)

Egg Frittata

Scramble 12 eggs with 2 cups of milk, place in a 13x 9 pyrex and bake at 400 degrees for 45 minutes. I also have browned onions and added spinach to the scrambled eggs. You can also add cheese on top, I usually do about a cup of cheddar and
mozzarella. You can also make it in half in a 8x8 pan.
