Easy Mexican Casserole - only needs 2 dishes

In a dutch oven, brown 1lb ground beef. Drain. Dump in a drained can of mexicorn. (I sometimes dump in a drained/rinsed can of blackbeans too) Dump in a jar of salsa (mild/medium/hot, to your preference. I sometimes do diced tomatoes instead). Dump in 1 cup minute rice and 1 cup water. Cover, cook for 5 mins until rice is done.

Dump that whole thing into a 13x9 casserole dish.

Spread 16 oz sour cream on top.

Sprinkle 2 cups shredded cheddar.. or whatever cheese.. on top.

Bake at 375 for 20-30 mins until all melty and bubbly.

It's good by itself, or with tortilla chips.

Oh - if you do diced tomatoes instead of the salsa, you might want to add a little taco seasoning.
