I need help with some new recipes that are quick and easy to make. My family is getting tired of the same old meals I've been cooking forever. I need some new meal ideas.

Here are a few easy recipes that my family enjoys.

Crispy Grilled Chicken

A very moist and easy way to make crispy chicken on the grill:

In a small bowl put enough mayo to generously coat both sides of chicken. (I use boneless chicken breasts) Add any spices (fresh or dried) you are in the mood for to the mayo. If you are thinking Italian add some garlic, basil, oregano, parmesan cheese, salt & pepper... Mexican- some taco seasoning, or cumin, cilantro, chili powder... or you could do a lemon pepper combo. Use your imagination and it will be wonderful.

Coat both sides of chicken and cook on grill turning once until done. The result is a great crispy outside with a very moist inside.

Mexican Chicken Casserole

A healthy, low-fat, easy, quick meal that tastes great!

Makes 4 servings

Total time: approx 45 min.

*3/4 lb. boneless skinless chicken breasts, cut into bite-size pieces

*1 tsp. ground cumin (or taco seasoning)

*1 green pepper, chopped

*1-1/2 cups salsa

*2 oz. (1/4 of 8-oz. pkg.) cream cheese (reg or low-fat)

*1 can (15 oz.) black beans, drained, rinsed (could use low-sodium)

*1 tomato, chopped

*2 whole wheat tortillas (6 inch) (I use 4 corn tortillas)

*1/2 cup Mexican blend shredded cheese

*sour cream for garnish, if desired

1. HEAT oven to 375ºF.

2. COOK and stir chicken and cumin in nonstick skillet sprayed with cooking spray on medium heat 2 min. Add peppers; cook 2 min., stirring occasionally. Stir in salsa; cook 2 min. Add cream cheese; cook 2 min. or until melted. Stir in beans and tomatoes.

3. SPOON 1/3 of chicken mixture into 8-inch square baking dish; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture; cover.

4. BAKE 20 min. or until heated through. Sprinkle with remaining shredded cheese; bake, uncovered, 5 min. or until melted.

Beef Stroganoff

One of the easiest meals ever and one of my family's favorites.

4 cups beef cubes

1 10.75 oz. can cream of mushroom soup

1 cup frozen peas, broccoli or other veggie (optional)

1 cup sour cream

Place beef in slow cooker. Cover with mushroom soup. Cover. Cook on low 6-8 hours or until meat is tender. Stir in veggies, if using, about 1/2 hour before serving. Stir in sour cream.

Serve over cooked rice or pasta.

This a recipe that I created and put together while sheltering the Hurricane.

Hurricane Rita Chicken & Pasta

1 pkg chicken tenders or chicken breasts

1 container mixed Good Seasons Italian Dressing

1 pkg cooked pasta ( I use whole grain farfalle but you can use just about any small pasta you want)

2 cans quartered artichoke hearts (optional)

Preheat oven to 350 degrees. In glass baking dish put chicken and cover with 1 bottle Good seasons Italian dressing. Bake until done. I usually bake 45 minutes to 1 hour depending on the chicken cut I use. No need to turn chicken during cooking and because of dressing chicken stays nice and moist.

Prepare Pasta per package directions. When Chicken is done cut into bite size pieces. Logically, you could do this before but I do not. Toss chicken and remaining dressing with pasta. Add more Good Seasons (mixed up) to the mix to taste.

We usually grate fresh parmesan on top and serve with salad and bread.

And yes, like it's name it was concocted while we were weathering what we got of Hurricane Rita.

I feel your pain, I love to cook but we have a lot of food alergies so is hard to find new thing to cook, specially pre made things.
What my family enjoy the most is stir fry use any kind of meat you have, beef, chicken shimp and tons of vegetables,m what ever is in season. There are different kinds of sauces or even just tamari sauce. Sometimes I use quinoa to coat the meat, it is awsome

Easy Mac an Cheese plus.
cook any kind of Macaronie (1 lb)
mix in 2-3 cups shredded cheese
put 1/2 in baking dish and put a layer of sliced cheese on top ( American, Montery, Provolone, Munster)
put rest of mac in pan and cover with sliced cheese.
put in pre heated 400 oven for 20 - 30 min or until cheese is melted and golden brown.

Some times I add diced (cooked) chicken, turkey, or ham to this or 1 1/2c ground beef and serve with a veggie (celery, baby carrots, anything you have on hane) dip (any salad dressing) tray or just a side salad.

Or just take your favorite chicken nugget of pattie and put a little sauce on it with cheese and make a quick Parm with it.

I have been here sooooo many times before. Thank goodness my sister-in-law is in culinary school. This is actually a recipe she shared with me.

Homemade Pizza Pockets
You will need:
Refrigerated Pizza Dough (one roll makes 4 pockets)
Canned Pizza Sauce
Shredded Mozzarella Cheese
Any desired toppings, be sure to cook meats first

Heat oven to 425 F. Unroll dough, with a pizza cutter cut into 4 equal sections. Apply pizza sauce to 1/2 of each section. Add cheese and toppings to the side with the sauce. Fold empty side over side with toppings and sauce. Place on baking sheet and cook 10-15 mins or until golden brown on top.

Pizza sauce and toppings can be substituted with any sandwich fixings of your choice. I have found that this is a great way to make hot ham & cheese sandwiches in the winter.

Shirmp Stir Fry - take 8 minutes!

1 bag of PEELED precooked, frozen shrimp
3/4 cup of water, chicken broth, or shrimp broth
1 cup of instant rice
1 bag of frozen veggies {I likethe stir fry mixes}

Put everything in a skillet or wok. Cook on high/ med hig for about 8 minutes. seaso n with your favorite flavors. serve.

The tails are on the shrimp still, so you take those off. But my kids LOVe this and you can use chicken or fish.

Try making Chicken Bacon Ranch Pasta!

1 box Suddenly Salad (Suddenly Pasta Salad) Bacon Ranch Pasta prepared as directed on box.
Add however much left over chicken you want or about !/2 cup chicken per person. You can use fresh cooked too but you need to have it cooled as it is a cold pasta salad.
Add extra ranch dressing and bacon or bacon bits if you'd like!
As a tip pre make the pasta the night before. Cut up the chicken and toss it in right before serving. Quick easy and a little different!
You can use Thanksgiving turkey left overs for this too!

I have a great tortilla soup recipe that everyone in my family loves... even those that are a little picky...

1 1/2 lbs of boneless skinless chicken, cut into bite size peices.
1 onion diced
1 green pepper diced
1 package of taco seasoning
1 box of red beans and rice mix
1 box of chicken stock
2 cans of rotel
1 can of hominy
** cilantro, avacado, sour cream and shredded cheese as garnish**

you brown the chicken, onions, green pepper, and taco seasoning, until chicken is completely cooked.

In the mean time prepare the red beans and rice according to the box..

When your chicken is done, add stock and rotel, cook for aprox. 5 min, just until everything is warm, then add the red beans and rice and hominy last, cook for another 10 min.. then serve with recomended garnish... It's amazing!

i did post this in another thread but they are good recipies so ill re post them here

seasoned bbq chicken:

seasoned pepper
poultry seasoning.
mc corminc brand steak house seasoning grinder
mc cormic brand garlic pepper grinder
i make a rub out of this with the dry seasonings and then cook on the grill till they are well done then i cover them in sweet baby rays bbq sauce.

* i do not have exact amounts because alot of my chicken recipes are things i have come up ant tried on my own the ones that are successful i keep.

another one i have is Italian lemon chicken.

in a medium bowl, mix a small bottle of wish bone Italian salad dressing, ground cumin, garlic powder, lime powder,
grated lemon peel*, lemon slices, crushed red pepper (to your own spice level not meant to be very spicy.) ,dried oregano leaves. parsley flakes, and basil leaves.

* for grated lemon take a whole lemon and grated it over the bowl with a medium fine cheese grater. then slice it up and toss in the lemon.

in a 13 x 9 inch pan place your chicken and contents of bowl ( you can either let marinate over night or cook right away if you cook right away put the lemon slices on top the chicken)

put in the oven at 375 till throughly cooked

Take 1 pound of hamburger brown it cook noddles add cream of chicken or cream of mushroom to nodles mix with hamburger my kids love that serve with a veggie ready in 15 minutes good

Another favorite is Chicken burito's..........

Get the large soft shell taco's, cooked cubed chicken, black beans, rice and refried beans, tomato and shredded taco cheese.

Layer the tortillas like this, first spread the refried beans on bottom, then add to the one side the rest of the ingredients, chicken, rice, black beans, tomatoes and cheese roll up like a burrito by folding in both ends and folding over the stuffing and roll completely then place in a pan with oil and toast each side, i also add sour cream either before or after you toast each side...............Enjoy!

Here is one of my favorites that my kids just love! Chicken Pesto and tomato pizza

Get a ball of pizza dough, i get it from Wal-Mart above their premade pizzas in the deli section. I cut each ball in two to make 2 thin pizza's. Cook about 4 chicken breasts, 2 per pizza, dice up into cubes. While cooking chicken you can roll out the pizza dough into the size you want. Get a jar of Pesto sauce, in the spaghetti aisle on top shelf at Wal-Mart, spread an even layer of pesto on the bottom of the pizza dough, top with chicken, tomatoes and mozzarella cheese, bake in oven at 325 for 15-20 min.

Our kids love "Straw Hats", or basically make your own taco salad. As for the beans, we have a new vegetarian in our family, so we make canned black beans with half a package of taco seasoning, and you can't really taste the difference in the flavor. Odd, but true. All ingredients are optional, but we put them all on the table to expand our kids choices in food. It's how we got our kids to like lettuce. :D

1 lb. taco meat or 1 lb taco flavored black beans

1 bag of corn chips such as Tostitos

1 -2 med. tomatos, diced

lettuce, shredded into bite size pieces


sour cream

avocados or guacamole

black olives


Salsa, salsa verde, etc...

Brown 1 lb. of ground beef and drain. Add your packet of taco seasoning, and follow the packet's directions. Chop up all of your veggies and place them in small bowls.

This is best eaten in a bowl for kiddos. Take a handful of chips, and crush in the bottom of the bowl. Add other ingredients as you like. We don't pressure our kids to put this or that in it, and they love it (my little ones love the crushing of the chips).

I'm not sure what's already in your regular menu but here's something to try. asparagus with bacon is a quick a healthy dish. wrap 3-4 pieces of asparagus (cut into 3in long) in bacon. If you have prosciutto this is also good but bacon will do the job just as well. Sauté some onions in butter then add the bacon asparagus wrap. in a glass, mix 1 tbsp of oyster sauce with 2 tbsps of water and pour into the pan. simmer until asparagus is cooked, and serve. This is an original Japanese recipe called asupura but i added some twist by using oyster sauce instead of regular soy sauce. You can also try soy sauce or hoisin sauce. Very tasty and yummy, great with rice :)

1/2 stick margarine or butter
1 pkg. cream cheese (8 oz.)
1 cup parmesan cheese (dry, from a canister)
1 cup milk
Melt butter and cream cheese together in a medium-sized skillet.
This is going to look oily and runny, but that's how it should look.
Add the milk and then the parmesan cheese at the very last, stirring until the sauce
is thick and creamy. Serve over your favorite pasta. Add chicken, peas or your fav. veg..
Sevre with garlic bread and a salad..Enjoy

Pepperoni Chicken

4 boneless, skinless chicken breast
1/4 bag pepporoni slices
1 jar pizza sauce
4 slices mozella cheese
garlic salt

sprinkle garlic salt on chicken breast
on each chicken breast place 1 slice of cheese
on top of the cheese place 3-4 slice of pepperoni
roll the chicken and secure ends with a toothpick
pour pizza sauce over the chicken
cover with foil and seal the edges of the pan
bake on 350 for 35 minutes

One of my new favorites is Taco Soup. I don't know if thats one of your "same olds" or not. lol

I make it with one pound hamburger and one large onion (or two small) and cook them up in the frying pan. Then put either a can of corn or cup or so of frozen corn in a pot with 2 cups water. If I use the frozen I let those boil a little. If using canned just add the rest of the ingredients right away- two cans diced tomatoes (or a couple fresh chopped up), one can pinto beansl and one package of taco seasoning and one package of dry ranch dressing mix seasoning. Add the cooked hanburger and onion and simmer for about 10 minutes after bringing to a low boil. I like to add cheese on top when done and eat it with chips or fritos/tortilla chips. It only takes about 20 minutes total, including the 10 minute cook time.

I can't take credit for this recipe, however it is from the magazine called Cuisine Lite Fresh and Fabulous.
Orange-Glazed Chicken with grilled oranges - makes 4 servings

For the Vinaigrette -
1/4 cup extra virgin olive oil
2 Tbsp. cider vinegar
2 Tbsp. fresh orange juice
1 Tbsp. minced shallots
1 Tbsp. honey
1 tsp. Dijon mustard
1/2 tsp. kosher salt

For the chicken -
4 boneless, skinless chicken breast halves (5-6 oz each) (I buy Bell and Evans brand from the fresh meat counter at our local meat market)
2 navel oranges, quartered
1 Tbsp. olive oil
1 tsp black pepper
1/2 tsp kosher salt
1 avocado, pitted, peeled, and thinly sliced
8 tsp. roasted sunflower seeds, divided

Preheat grill to medium-high. Brush grill grate with oil.
Whisk together 1/4 cup oil, vinegar, orange juice, shallots, honey, Dijon, and 1/2 tsp salt for the vinaigrette in a small bowl; set aside 2/3 of the vinaigrette for the California salad.
Coat chicken and oranges with 1 Tbsp. oil; set oranges aside. Season chicken with pepper and 1/2 tsp. salt.
Grill chicken, covered, until cooked through, 4-5 minutes per side. Baste chicken with remaining vinaigrette several times during grilling.
Add oranges to grill during last few minutes of grilling; heat until grill marks form. Remove chicken and oranges from grill; tent with foil.
Divide avocado slices among 4 plates. Top each serving with a chicken breast and 2 tsp. sunflower seeds. Serve with grilled oranges and California Salad. If you would like to know all nutrition info for this recipe, just let me know.

For the California Salad with zesty sprouts
Makes 4 servings

1 cup alfalfa sprouts
2 Tbsp. orange zest
Reserved vinaigrette from orange glazed chicken
4 cups mixed salad greens
2 cups sliced fresh strawberries

Toss sprouts and zest with 3 Tbsp. vinaigrette reserved from Orange Glazed chicken; set aside.
Toss greens and strawberries with remaining reserved vinaigretti.
Divide greens and strawberries among 4 plates and place a mound of dressed sprouts on the side. Hope you enjoy!

I totally feel your pain! My family is excited that I'm willing to turn the oven on again--it adds more options. I made this Italian Chicken recipe the other night and they loved it! I happened to have zucchini and mushrooms on hand, so I threw them in. I also had a spaghetti squash, so I served it on that.

Italian Chicken
Boneless Skinless Chicken Breast
Jarred marinara sauce
Grated Parmesan Cheese
Sliced Provolone Cheese
Italian Seasoning Mix

Preheat oven to 375F. Pound chicken to even thickeness—season with salt and pepper. Place in casserole dish. Spoon sauce over chicken. Top with provolone cheese slice and Italian seasoning. Cover with foil and bake 30-40 minutes or until chicken juices run clear. Top with Parmesan cheese and serve with pasta and additional sauce, if desired

Pop some chicken pieces (skin on or off) in a baking dish, cover with one small bottle of sweet chili sauce and bake at 400F/200C for about 40 mins or until juices run clear. Roast some carrots (either julienne or small thin chunks) at the same time and serve with rice!

Or pop some chicken pieces in baking dish. Drain 2 tins of sliced peaches and empty into dish with chicken. Sprinkle with salt, pepper and cinnamon, bake for an hour at 400F/200C. Serve with sweet potato and carrot mash.

Chicken and rice bake:
Add 1 1/2 cups rice (or 2 bags of boil in bag rice, pour out of the bag) into a big bowl. Add 1 can cream chicken soup (or any other creamy condensed soup) and 1 1/2 cups chicken stock. Add some small bits of frozen veg (broccoli and cauliflower work a treat, but you could use peas and carrots and corn). Mix well and empty into deep casserole dish. Top with chicken, cover and bake for about an hour (30 mins more if chicken is on the bone or if chicken pieces are big, you could cut the chicken up to reduce cooking time) then uncover and add small bit of cheddar on the chicken, bake for another 10 mins or until cheese bubbling. Also to add a tex mex twist, you could top chicken with salsa before cooking, or use diced tomatoes, cream of tomato soup and salsa instead of cream of chick soup).

Hi. This may sound like a fancy recipie but it is sooo... easy and quick and it is so good and both of our kids really like it too!

Whole grain Spaghetti with Peorino, Prosciutto and Pepper

1 pound whole grain(or whole wheat) spaghetti
2 Tbsp. Peppercorns, coarsely ground
1/4 cup extra-virgin olive oil
1 1/2 cups grated Pecorino(we use parmesan, the real stuff though or Asiago cause it is a bit cheaper)
6 ounces thinly sliced proscuitto, chopped(Can get at Deli.)
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh basil leaves(Make sure parsley and basil are fresh)

Cook the Spaghetti. While it is cooking Heat a small heavy bottomed skillet over med. - high heat. Add the peppercorns and toast for about 20-30 seconds. Add the oil and cook for 1 minute. Remove the pan from the heat. Drain the pasta. Transfer the spaghetti to a large serving bowl. Add Peccorino(Or parm. or Asiago) and toss to combine. Add the oil mixture, prosciutto, Parsley, and Basil. Toss well to combine all ingredients. If you are making this for company you can save some of the Basil and Parsley and sprinkle it over top as a garnish. I make sure and prep everything before I start cooking cause it is a lot easier but this is honestly one of the easiest best tasting pasta recipies. Also I have a recipie for Jerk rub and it is great on Chicken, pork and probably even steak. I tripled the recipie and rubbed it all over a thawed out Whole roasting chicken under the skin too and inside and I let it marinade over night and cooked it the next day and it was amazing and very easy.

1 Tsp. dried thyme leaves
1/2 Tsp. ground allspice
1 Tsp. brown sugar
Dash cinnamon
1/4 tsp. salt
1/4 tsp. coarsley ground black pepper
Dash ground Cayenne
1/2 tsp. garlic powder

Just mix it all together and rub it on your meat. A lot of times if I am making meat for the 4 of us I double the recipie as I really like to cover all of the meat. It is not too spicy so the kids should like it too. Ours do. I also mixed some in ground beef one time to put on pizza. Good luck.
