I love these quick and easy spinache puffs. You take a box of thawed chopped spinach and drain it. Then mix it with 1/2 cup of butter. Set aside. take a container of biscuits and separate each biscuit in half. slightly hallow out center put a little of the spinache mix in. put biscuit top on and crimp edges. repeat. cook according to biscuit package.

Ajapsandali (its Georgian)

2lbs tomatoes (peeled and squished)
2lbs eggplant (cut into cubes)
2lbs potatoes (cut into cubes)
parsley or cilantro (according to taste I like cilantro others like parsley)
salt and peper
water
onions (optional)
oil

fry onions in oil in the same pot you'll be using. Add the eggplant fry lightly add water (just enough to help cook down) until you have room in the pot for the other ingredients, add potatoes, tomatoes and enough water to cook the potatoes (not too much or it'll come out watery...think a bit more watery than spaghetti sauce consistency). When potatoes are done add chopped parsley/cilantro and salt and pepper to taste.

Makes a lot!!!!!!!

Mexican Corn Chowder



1 1/2 lbs boneless skinless chicken breasts

1/2 cup chopped onion

1-2 cloves of garlic minced

3 tablespoons of butter or marg

2 chicken bouillon cubes

1 cup hot water

1/2-1 tsp ground cumin

2 cups half and half cream

2 cups (8 oz.) shredded Monterey Jack cheese

1 can (16 oz.) cream style corn

1 can (4 oz.) chopped green chilies-undrained

1/4 -1 teaspoon hot pepper sauce

1 medium tomato chopped

Fresh cilantro or parsley is optional



Directions:



Cut chicken into bite size pieces. In a Dutch oven brown chicken, onion and garlic in butter until chicken is no longer pink. Dissolve the bouillon in hot water. Add to pan along with cumin; bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add cream, cheese, corn, chilies and hot pepper sauce. Cook and stir over low heat until the cheese is melted. Stir in tomato. Serve immediately; garnish with cilantro if desired.



Makes: 6-8 servings
