Hi! I also have a 2 year old and one who is almost 9 months.... there are several things that they both love to eat that are super easy to make.
- Chicken Casserole.
1 can cream of chicken soup
2 cups of shredded chicken
1 can of chicken
1 package of Egg Noodles
cook the pasta till tender in boiling water, drain. add chicken and soup. stir. put 1/2 of the noodle mixture in a casserole pan, top with 1/2 of cheese. add rest of mixture, top with remaining cheese. bake at 350 till cheese is melted. I often add peas, shredded carrot, corn, or other veggie to the mixture to give it more nutritional value.- just make sure it's cooled before you give it to the little ones.
enchilada bake- this one is a bit spicy.
-1 package of tortillas- corn or flour- whatever you prefer
-1 can of green enchilada sauce- i use mild- but choose your preference
- roughly 1 lb of chicken shredded- you can use canned if you want to cut down on time
- 1 one can cream of chicken soup
- 2 cups- shredded cheese- cheddar, or Mexican blend work well.
heat enchilada sauce, soup and chicken in sauce pan till warm stirring regularly. in a casserole dish layer tortilla, enchilada sauce mixture, cheese, till you run out- make sure you end up with cheese on top. then bake at around 350 till cheese is melted.
Egg, Avacado burro.- this one is more for breakfast.
Scramble a few eggs, slice an avacado, cook a few slices of bacon, add a bit of cheese, roll up in a flour tortilla and you are done.- my 2 year old likes to dip hers in ranch.-
these are just a few, also mac'n'cheese and pizza are favorites. good luck :)
