FRENCH TOAST CASSEROLE

5 cups cubed bread

4 eggs

1 ½ cups milk

¼ cup sugar divided

¼ tsp salt

1 tsp vanilla extract

1 tbsp butter

1 tsp cinnamon

Preheat oven to 350

Lightly grease 8x8 baking dish (I used Pam spray). Line the bottom of the baking dish with the bread cubes.

In a large bowl, beat together the eggs, milk, salt, vanilla and 2 Tbsp of sugar. Pour over the bread. Dot with pieces of the butter and let stand for 10 minutes.

Combine remaining sugar and cinnamon and then sprinkle over the top.

Bake at 350 for 45-50 minutes until the top is golden. Serve with syrup and fresh fruit.

(NOTE: Recipe can be doubled and baked in a 9x13 pan)

April, do you use fresh bread or old bread?  I can't wait to try!
