Im trying to get my family to eat healthier this summer and am looking for meals (not from the can). I made these zucchini pizzas last night and they make great leftovers as well. Does anyone else have any (can free) fresh summery meals they like to make for their family?

I belong to a meal plan service that features lighter fare (but still really good). I'm on Weight Watchers and my kids battle with weight issues if I don't monitor their junk food intake. So I'm right there with you!

This is a great recipe we tried just last night my whole family enjoyed:

Fish Sticks
Shrinking On a Budget Meal Plans
Serves 5
5 Servings (4 toes per serving)

Ingredients
1 lb tilapia, cut into 20 (two bite) chunks
*1 cup flour (you will only use 1/2 cup)
1 egg , beaten
1 1/2 cups Panko bread crumbs
large pinch of old bay seasoning
salt and pepper to taste

Directions:
Preheat oven to 425 degrees.In a plate, season flour well with old bay, salt and pepper. Do a taste test on the flour to make sure it is well seasoned. A few pieces at a time, dip fish pieces into flour mixture dusting off the excess. Dip the fish in egg, then panko bread crumbs (I seasoned bread crumbs as well with salt and pepper). Place a cooling rack into a rimmed baking sheet and spray rack with Pam. Arrange breaded fish on rack. Once all fish is breaded and on tray, spray each piece liberally with Pam. Place in preheated oven and bake until golden brown and cooked through, approximately 8-10 minutes. Check after 8 minutes. Return to oven for 2 more minutes if not cooked through. Check every two minutes after if still not cooked through.Let fish rest for 2-3 minutes before serving (it will crisp while cooling).
