My Granny is the best cook ever. She has published her own cookbook and has given me her treasures. One of my famliy's favorite recipes is her Sour Cream Enchiladas. Recently we have been experimenting with meatless meals. So I took out the hamburger to her recipe and experimented. It is so delicious I just had to share it. This is what I have come up with:
1 chopped onion
2 cups chopped mushrooms
5oz to 10oz spinach (which if u prefer, i'm not big on a bunch of spinach)
1tsp garlic powder
1 tsp cumin
1/2 tsp salt
1 tbsp chili powder
1 can cream of mushroom soup
1/2 cup milk
1 (8oz) sour cream
cheddar cheese, divided
1 can sliced ripe olives
Heat a skillet with evoo. Add the onion and cook for a couple mins. Stir in the mushrooms. While that is cooking add the spices. Right before they are done add the spinach, heat for just a little, then remove from heat and set aside. Combine soup and milk in a small saucepan, cook til bubbling. Remove from heat, stir in sour cream. Set aside.
Place a desired amt of the spinach mixture on a tortilla. Spinkle with cheese and roll up. Place in casserole dish. After all tortillas are rolled up pour sour cream mixture over top. Cover and bake at 350 for 25 mins til middle is heated through. Spinkle with remaining cheese and olives. Place back in the oven til cheese is melted.
If you like this recipe but prefer meat, just add it to your onion section. I added the chopped mushrooms and spinach for taste instead of having just cheese. But you could just have cheese. We have tried that too. The kids prefer the just cheese and they gobble it down. I usually make two seperate dishes, one for the adults and one for the kids. Hope you enjoy.
