I am interested in grilling vegetables on the grill, especially potatoes. Can anyone give me the 411 on how to go about this without burning them, yet making sure they are cooked? I'd love all recipes/suggestions.

Make a potato pack.

Tin foil

Cubed potatoes

seasoning

butter

fold it up add it to the grill and let it go. I would suggest with spraying the foil before adding potatoes. When we do it I flip them once. Transfer to a dish afterwards and add cheese and sour cream

dice them up into cubes and put them in tin foil. Add a dab of butter or oil. salt and pepper to taste. Put them directly on the coals or where ever on the grill and grill for about an hour. You can add any other veggies you want. i.e. carrots, corn, onion, etc. in with each potato and it will still be very good. Oh and yes you need to wrap the foil closed so it will "steam" them as they cook.

Jana is right the only way to insure they are cooked is to par cook them first. Or try sweet potatoes as they take less cooking time and taste great too.

You may want to consider pre-cooking the potatoes before grilling them. My husband will often par boil the potatoes then piece them and cook them either on a vegetable rack on the grill, or on skewers. Addition of a little olive oil or herb oil will help to keep them from sticking. :)

Good luck.
