Here is a great Turkey Meatloaf recipe---really tasty.
Turkey Meatloaf
1-1/2 lbs. ground turkey
1 egg (or egg substitute)
1 cup fresh bread crumbs (2-3 slices bread)
1 TBSP Parmesan cheese
1 TBSP fresh chopped parsley
3 TBSP chili sauce (save 1 TBSP for spreading on loaf)
1/2 pkg. chopped spinach (thawed and well drained)
fresh ground pepper (to taste)
1/8 tsp Mrs. Dash (herbs & spices)
2 cloves garlic, finely minced or unse Lawry's garlic powder--approx. 1/2 tsp.
Preheat oven to 350 degrees. Bake in a pyrex or Teflon pan for 35-40 minutes.
Mix well the above ingredients. Shape into a loaf. Spread with 1 tablespoon chili sauce. Place on bottom rack of oven.
Serve hot as a main course or cold as a sandwich filling.

Here's a great one I just tried for the first time. It's so delicious!
Turkey Parmesan Pesto Meatballs
1 1/2 lbs ground turkey
1/4 cup pesto sauce
1/3 cup parmesan cheese
1 small white onion, chopped
1/2 tsp salt
additional pesto sauce for dipping
Preheat oven to 375°F. In large bowl, gently combine the ground turkey, pesto, Parmesan cheese, onion, and salt. Shape mixture into about 30 equal sized meatballs. Place meatballs on a wire rack above a foil-lined baking sheet. Make sure they are spaced apart, and don't touch. Bake in preheated oven for 15 to 20 minutes. Serve warm with additional pesto sauce for dipping. I like to mix the pesto sauce with a little bit of cream cheese and hot water to make a creamy dip. It's delicious!!
