I have the books to these recipes, and they are all so easy and yummy! The meatloaf and burgers are a bit on the spicy side, but you can always make it more mild for kids. Plus, they are all healthy! My husband and I eat from the cookbooks all the time! Hope this helps =)

GROUND TURKEY ENCHILADAS

1 1/2 lbs ground turkey
1 pkg frozen spinach - thawed and drained
2 cups salsa
1 can diced tomatoes
1 pkg flour tortillas
2 cups Mexican blend cheese
1 8 oz. block cream cheese
ground cumin to taste

Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.

Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.

Serve with refried beans and Mexican rice. Sour cream and guacamole are also great additions.

GROUND BEEF (TURKEY) STROGANOFF

1 lb. ground beef or turkey
1/2 c. chopped onion
1 can cream of mushroom soup with 1/4 can milk
1 c. sour cream
1/4 tsp. garlic powder
Salt and pepper to taste

Brown ground beef (turkey) and onion. Drain off fat. Add seasonings and soup with milk. Simmer 20 minutes. Stir frequently. Add sour cream and heat through. Serve over noodles.

GROUND TURKEY NOODLE CASSEROLE

1 1/2 lbs. ground turkey
1/3 c. onion, chopped
1/3 c. green pepper, chopped
1 (15 oz.) can tomato sauce
1/2 tsp. salt
1/4 tsp. pepper
1 (8 oz.) pkg. wide noodles
1 (8 oz.) pkg. lowfat cream cheese
1 c. lowfat cottage cheese
1/2 c. plain yogurt
1 tbsp. poppy seed (optional)

Cook the ground turkey, the onion and green pepper until the meat is no longer pink. Drain fat. Stir in tomato sauce, salt and pepper. Cook the noodles; drain. In a bowl, combine the cheeses and yogurt; toss with hot noodles. Layer 3/4 of the noodle mixture in a 13 x 9 inch casserole. Spoon meat mixture on top, leaving a border of noodles showing. Top with remainder of noodle mixture, leaving a border of meat showing. Sprinkle with poppy seed (optional). Bake in 375 degree oven for 30 minutes, covered. Uncover and continue baking an additional 10 to 15 minutes. Serves 8.

We use it just like hamburger. In Speghetti and meat balls. You can mix it with a little pork burger to help with it sticking together. Taco's with ground turkey. If you dont use pork burger you can always use deer burger. Good luck
