most cook books dont have recipes for large familys and sometime you just have time to do the math for the right amount. so anyone got any recipes for a family of 6

You might want to modify this a bit, I can tell you the way I am sending it I have gotten rave revues.
My hubby had a heart attack so I am trying to be thrifty because he has been out of work and yet still cook heart healthy lol
Turkey Chili
Ingredients:
2 tablespoons extra virgin olive oil
5 gloves garlic minced
1 large or 2 small gn peppers seeded and chopped
1 onion chopped
1 habanero pepper seeded and chopped < I omitted >
2 pounds lean ground turkey < you can use ground beef >
2 tablespoons chili powder
2 teaspoons red pepper flakes
1 tablespoon paprika
2 teaspoons dried oregano
1 envelope instant hot chocolate mix
1 teaspoon Worcestershire sauce
1 teaspoon liquid smoke flavoring
2 teaspoons seasoned salt
2 ( 14.5ounce )can diced tomatoes with green chile peppers drained
1 ( 8 ounce) can tomato sauce
1 ( 15 ounce ) can pinto beans< or kidney I prefer pinto >drained
1/2 cup cheap beer
1 can whole kernel corn < optional >
1 tablespoon hot pepper sauce < optional >
Heat the olive oil in a large frying pan over med heat,add the first four ingredients in the olive oil until the onion is transparent. put in a bowl and now crumble in the turkey and brown. I put a lid on it.once it is no longer pink, I transfer everything to my big chili pot and mix everything together. You can either simmer on the stove partially covered with a lid for an hour or I like to put some into a crock pot and then after I let it simmer and then cool I divide it up and freeze it. the longer it cooks the better it is.

I make chicken enchiladas for my family of four and we always have enough for 2 days or more. For eight I would take 2 packs boneless skinless chicken breasts. simply put them in a pan with sbout 3 " chicken broth and about 7 cilatro sprigs (you can use more for more flavor but my little ones think too much cilantro is spicy) Poach til chicken is white and cookes flipping in pan halfway through. then I would trasnfer the chicken breasts into a large bowls and shred with 2 forks. Then add to the bowl approx 1-1/2 cup shredded cheddar jack cheese, 1 can dices tomatoes, 1/2 block of cream cheese (softened at room temp) and a small can of tomatoe paste (enough paste just to bind the ingredients in the bowl-almost a whole can of this size recipe), Depending on how old your kids are and the taste you want you can add a little more fresh cilatro leaves minced in this mixtues. I use a 9x13' pan you you should use a larger one and fill flour tortillas with the mixture and roll over. Place seam side down in pan. I put La Victoria (Mild enchilada sauce-- Also I use la-victorias canned tomates with lime juice and cilantro-I find both in the mexican food isle in most stores). Pour enhilada sauce over enchiladas then top with colby-jack shredded cheese. I would then put it in a 375 degree oven til the cheese is COMPLETLY melted. when I make enchiladads I normally serve VIGO rice and beans on the side ( also in the mexican isle-I mix VIGO yellow rice and VIGO black beans and rice together)I don't use a particular recipe for echiladas. I'm sure you can play with the ingredients and you'll be just fine. Hope this is not too confusing and is helpful.

have you try a home cooked Pork Roast?

Need: Slow cooker

Port shoulder/ buy a size that fits your slow cookers pot

2 Brown Gravy packets

water

salt

pepper

oil



put salt and pepper and all sides of the pork. Start this first thing in the morning. heat a pan with about 1 to 2 tables of oil. . When the pan is heated. Sear all sides of the meat. about 2mins per side. In the slow cooker put about 2 - 2 1/2 cups of water and stir in the two gravy packets. After the meat is seared place in the pot fat side down. You might need tongs and spat to pick it up. Cook for 6-8 hours depending on the size of meat.

You also cook corn and mashed potatoes. Remember also buy gravy packets for the potatoes. Or make the gravy from the juice left in the pot after the the meat is cooked.

This dinner is good for a large family. O' don't forget the biscuits. And if you want to get fancy. take out two sticks of butter early in the morning. Then close to dinner time mix the butter with a whole 6 oz or 8oz container of honey. Then you have honey butter that will last you for at least a month.
