I belong to a meal planning service called Shrinking On A Budget so I have like an entire binder of recipes like this. Although it focuses on Weight Watchers my kids and husband love the food too. It is just really good, less fattening food that the kids will actually eat. My son, who has always battled his weight, has lost much of the unhealthy fat too. She has a newsletter that is free though and it gives family friendly recipes at the end of each newsletter.
Here is one we had last night:
Crispy Ranch Chicken
From: Shrinking On A Budget Meal Plan
servings: 4
Ingredients:
4 skinless, boneless chicken breasts (4 ounces each)
1 cup cornflakes cereal
1 packet dry Ranch dressing mix
tiny pinch cayenne pepper (ground red pepper)
1/3 cup reduced fat sour cream
Directions:Preheat oven to 350 degrees. If available, top a baking sheet with a wire cookie cooling rack and spray rack with nonstick cooking spray. If no wire rack is available, spray cookie sheet with nonstick cooing spray. Set aside.If necessary, cut chicken breast into 4 ounce portions. Rinse and chicken breasts and thoroughly dry with paper towels. With fork, mix cayenne pepper into sour cream. Coat both sides of each breast with sour cream.Add the cornflakes and Ranch Mix, and crush cornflakes well. The easiest way is to just squish the bag. Don't crush into a powder, but the coating doesn't need to have large chunks either.One at a time, put each sour cream coated chicken in the seasoned cornflake crumbs and gently shake until chicken breast is coated. Remove and put on chosen method of pan (see instructions above).;Do this separately with each chicken breast. You should only have one breast in the bag at a time.Lightly mist top of chicken with nonstick cooking spray, and bake in the preheated oven for 45 minutes.
