This is one of my best recipes that I make every month.... they are full of vegetables that the children wouldn't usually like and you can freeze them and they do not cost much at all. And there finger food so great for little children or for when your entertaining.
(I hope I wrote it right.... I am not great at explaining things I am better at doing them )
1kg of sausage mince or minced beef
6 sheets of puff pastry
1 carrots grated
1 large potatoe
1 zucchini's grated
1 large onion
1-2 cloves of garlic
salt and pepper
1 egg beaten
1-2 slices of day old bread cut into cubes soaked into milk
Makes approx 48
Preheat your oven to 200 or at least medium heat for 15 mins, Grate all your veggies and try and drain as much liquid as you can, chop your bread and pour a little milk over it then put it aside.... Use a oven tray and place some baking paper on it and set aside...
Get a large mixing bowl put your sausage meat in and then add the bread , salt, pepper and garlic then with your hands ( clean them first) mix then mixture together..... then add the vegetables and again mix it together.... this is the messy part.
Wash your hands then place one sheet of puff pastry down on a board cut it in half length ways... using a spoon or a piping bag put your sausage roll mix in the middle of your pastry then roll the side over and cut into 4's..... place this on your oven tray and prick with a fork then brush some egg on top ..... do this until all your sausage rolls are made...... turn the oven down then put them in until golden brown..... serve with sauce or alone or let them cool .... great for lunch box's also...
If you plan to freeze any ... do this b4 brushing them with egg and cooking... just place in a airtight container and they can freeze for 3 months.... just defrost and brush with egg then cook as normal.
These are so easy to make and are child friendly :) what they cant see wont hurt them ;p and fantastic for a picnic or packed lunch for the kids at school and since they can be frozen there always there for times when you havent got time to cook or just need a break.... much healthier than take away and much cheaper.
