One of our daughters favorites ( I have also made it for our Wednesday night church meal for about 50 people and everyone loved it.) is Hamburg Gravy.
i) 2 pounds lean ground beef(ground turkey could also be used)
2) Cream of mushroom soup, enough to made a sauce for the meat Half the amount of milk as you would use for soup
3) Onions, garlic, salt and pepper to taste
4) 2 cups white rice (Minute rice works of , or regular rice, BROWN RICE makes it really dry and tasteless.) (THE rice in a bag works great if you are in a hurry) follow instructions for the rice as stated on the bag or box.
In a deep frying pan scramble the Drain if necessary, season when cooking.
Start the rice just before you start the meat.
Serve over the rice
Add a salad, and family favorite veggie.
This freezes fine and you can serve the meat over mashed potatoes, or noodles. You could even serve thais over bread.
Our daughters are 20 and 25 and both of them go college out of state. When they come home on vacations I have to make this at least once. The oldest daughter is a culinary student and still this is one of her favorites.
Also have you thought of getting together 3 or 4 friends and meating at one persons home to make one meal each making enough for each mom to take home one paritially cooked meal of each meal. I have never been apart of this but we have several (5 or 6) moms that do this once a month or so.

I'm a working mum too, and sometimes feel too tired to cook something from scratch!! When i make things like lasgane, or cottage pie etc, i always make double so i can freeze the extra portions for another night. I take it out in the morning so its ready to pop in the oven when i get home. Then all you have to do is prepare some veg, or a salad etc. I invested in a slow cooker a few years back which is a god send, especially in winter when all you want to do is throw on your PJ's and snuggle up on the sofa. Simply chuck in what you want in the morning, and it slow cooks it all day and will be ready to eat at dinner time, no fuss, no hassle. Its great for soups, chops and stews.
