HELP! Can a Vegetarian and Meat Lover Make a Great Meal Together???

So my husband was raised a vegetarian and i love my meat, except pork, i need help finding different things to make that both of us and my 16month old will enjoy, something full of flavor but as little meat as possible,and still have everything my daughter needs to grow big and strong.... any help is truly appreciated! I'm tired of eating the same old mac n cheese and broccoli! LoL

I don't know if it's an option, but what about making things like stir fry then have tofu and chicken separate so each of you can choose what you like? That's what we do. Or he just eats my veggie option. My current favorite is swimming angels (recipe on allrecipes.com- it's AMAZING) with coconut baked tofu (super easy, also on allrecipes) and my DH eats chicken w/his. It's so easy to make that the extra step of making two proteins isn't a big deal. What about making your own sauces and separating some out before you add meat?

What about vegetarian lasagna? Cheese ravioli? Spaghetti with marinara sauce? Eggplant Parmesan? Fettucine Alfredo? Fettucine Primavera? My kids loved all of these dishes.

Then you can consider cheese and egg combos, such as a vegetable quiche (potato, onion and cheese is one of our favorites). Also cheese enchiladas, cheese and vegetable pizza, bean and cheese burritos, vegetarian chili, black bean and zucchini quesadillas, or even spaghetti squash:

Ingredients

1 spaghetti squash, halved lengthwise and seeded
2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced
1 1/2 cups chopped tomatoes
3/4 cup crumbled feta cheese
3 tablespoons sliced black olives
2 tablespoons chopped fresh basil

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled.
Meanwhile, heat oil in a skillet over medium heat. Saute onion in oil until tender. Add garlic, and saute for 2 to 3 minutes. Stir in the tomatoes, and cook only until tomatoes are warm.
Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl. Toss with the sauteed vegetables, feta cheese, olives, and basil. Serve warm.

When I had a vegetarian Brownie troop we ate vegetarian baked beans often, and we loved to make vegetable skewers to cook on the barbecue, and fruit kabobs just for fun - when your daughter gets to be about age three or four she can help you make them. Also tomato sandwiches (like a BLT but no bacon, and with a bit of garlic mixed in the mayonnaise).

As your daughter gets older, use those giant mushrooms in place of meat. If you marinate them in olive oil and salt you can then grill them and they make great "hamburgers" or meat substitutes.

Also, how strict a vegetarian is your husband? Will he eat chicken or fish? If so, your options have expanded greatly.
