HELP!!!! There was a recipe on the home page this morning for a quick and easy way to cook/roast a whole chicken. My printer isn't working so I was unable to print it out. I went and bought the chicken and the ingredients and now I can't find it. There was a picture of it also. If you know where I can find it please let me know. Thanks!!

We have a BBQ that has a bottom rack and the veggie rack. We just place it in the middle of the veggie rack and have the temp @ medium high. Let me know if you have any other questions. :-)

Ok I know I am late with a response but for next time. This is yummy and supper easy! Get an empty beer can or soda can pour in lemon juice and beer (optional) into can. Place lemon peels in the chicken and place chicken on top of the can. Rub chicken with salt and garlic pepper. Put chicken on the BBQ for 45 min to an hour on indirect heat ( medium to medium high).

Note: you can get a chicken stand from home depot for $20 or less I have had mine for 10 years so it is a good investment.

Chocolate Banana Bread Recipe:

The combination of chocolate and bananas is a sure-fire winner, and this chocolate banana bread takes that flavor combination to a new level, with the addition of chocolate chips in the bread, too. The result is a wonderfully cake-like banana bread that is bursting with chocolate goodness!
Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 5 minutes

Yield: 12 servings

Ingredients:

1/4 cup butter, softened to room temperature
1/4 cup cream cheese, softened to room temperature (low-fat is fine)
1/2 cup sugar
1 egg
2 large, very ripe (black, or almost black) bananas
1 tsp. vanilla extract
1/2 cup plain Greek yogurt
1/2 cup all-purpose flour
1/2 cup white whole wheat flour
3 Tbsp. unsweetened cocoa powder
1 tsp. baking soda
1/4 tsp. kosher salt
1 cup semisweet chocolate chips
Preparation:

Preheat oven to 350 degrees F. Grease a loaf pan.

With an electric mixer, beat butter, cream cheese and sugar together until fluffy.

Beat in egg, bananas, vanilla and Greek yogurt until smooth.

Dump flours, cocoa powder, baking soda and salt on top of batter. Beat in on low speed until incorporated. Stir in chocolate chips. Pour banana bread batter into prepared pan.

Bake 50 minutes or until a knife inserted in the center comes out clean.

BANANA MUFFINS:



if you like banana bread, you will adore these banana muffins. The crunchy nut streusel topping makes these muffins especially tasty. These muffins really taste best right out of the oven, but you can store them in an airtight container for several days or pop in a zipper-sealed plastic storage bag and put in the freezer for several months.




Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 18 muffins

Ingredients:

1-1/2 cups all-purpose flour

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. kosher salt

1 tsp. ground cinnamon

1/4 tsp. ground nutmeg

3 very ripe bananas, mashed

3/4 cup granulated sugar

1/3 cup butter, melted

1 large egg

Topping for Banana Muffins:

1/3 cup firmly-packed dark brown sugar

1/4 cup finely-chopped walnuts

2 Tbsp. all-purpose flour

2 Tbsp. butter

Preparation:

Preheat oven to 375 degrees F. Line a muffin tin with paper liners or spray generously with cooking spray.



Stir flour, baking powder, baking soda, salt, cinnamon and nutmeg together in a medium bowl.



In a large bowl, beat bananas, sugar, butter and egg together with an electric mixer until creamy. Fold the flour mixture into the banana mixture, stirring until combined. But do not overmix.



Spoon into muffin tins.



Stir brown sugar, walnuts and flour together. Cut in butter until mixture becomes crumbly. Sprinkle over muffin batter.



Bake 18-20 minutes.

Ingredients:

10 oz. tortilla chips (any variety you like)

Preheat oven to 375 degrees F. Spray a jelly roll pan (compare prices) with cooking spray.

Spread tortilla chips in a single layer on a baking sheet. It's okay if they overlap slightly.

Sprinkle shredded chicken evenly over the tortilla chips.

Top with shredded cheese.

Bake on the middle rack of the preheated oven 7-10 minutes, until the cheese is melted.

Ingredients:

1-1/2 cups frozen pitted cherries
3/4 cup low-fat vanilla soy milk
1/2 cup vanilla yogurt
Preparation:

Place the frozen cherries in a blender, food processor or Vita Mix.

Pour the soy milk over the cherries.

Add the yogurt. Puree until smooth.
Note: If you are using a blender, and you are having trouble grinding up the cherries, stop it. Remove the blender from the motor base. Use a spoon to force the cherries down into the blender blades. Replace the lid, return the blender to the motor base, and puree until smooth.

I am not sure what recipe that was, but I will tell you how I am make a juicy succulent chicken, it is my one pot wonder! 1 Big Roaster Chicken, 4 potatoes,cubed 4 stalks of celery, chopped, 4 carrots,chopped, 1 onion chopped. Place all of these ingredients in a big roaster. To season the chicken, I use Lawrys Seasoning, Minced garlic, Italian Seasoning, Fresh Ground Pepper. Preheat oven to 350 degrees, Place chicken in the pot, season, cover veggies with seasoning. Bake at 350 degrees for 2 hours , with the cover on. Chicken browns and is moist, veggies are perfect.
